Instructions

  1. Preheat oven to 325 °F (163 °C) and grease a 9×5-inch loaf pan with coconut oil spray, or similar.
  2. In a large bowl, whisk together coconut oil, maple syrup, eggs, bananas, almond milk, and vanilla extract.
  3. Add the baking soda, cinnamon, whole wheat flour, and salt to another large bowl. Scoop out two tablespoons of this dry mixture into a small bowl to toss the blueberries in.

    Gently fold together the remaining dry and wet ingredients until a batter forms. Then, add the floured blueberries and any extra flour from the small bowl into the batter and gently fold until just combined.

  4. Pour the batter into the prepared loaf pan and gently tap it against the countertop to release any air bubbles and to smooth out the top.
  5. Bake on the middle rack in the oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
