Why Grilled Cabbage is the Next Big Thing

In the world of vegetables, trends come and go. For a while, cauliflower reigned supreme, transforming into everything from pizza crusts to rice. But allow us to introduce you to the unsung hero that’s poised to steal the spotlight: cabbage, especially when grilled. This often-overlooked cruciferous vegetable is not just incredibly versatile; it’s a nutritional powerhouse waiting to be discovered by your grill.

Cabbage is packed with an impressive array of essential nutrients, making it a fantastic choice for any health-conscious diet. It’s an excellent source of vitamin C, bolstering your immune system, and vitamin K, crucial for blood clotting and bone health. Beyond these, it offers vitamin A, dietary fiber to aid digestion, and folate. Studies also suggest cabbage possesses powerful anti-inflammatory and antioxidant properties, contributing to overall well-being. And the best part? It’s remarkably delicious, particularly when infused with the smoky essence of the grill and paired with our homemade tahini-soy sauce.

The Irresistible Allure of Grilling Cabbage

Grilling cabbage isn’t just a cooking method; it’s an art that unlocks an entirely new dimension of flavor and texture. Unlike boiling or steaming, which can sometimes leave cabbage watery or bland, grilling imparts a unique smokiness that perfectly complements its natural sweetness. The intense heat of the grill caramelizes the sugars in the cabbage, creating beautifully charred edges that are bursting with robust flavor, while the inside becomes wonderfully tender and juicy. This process makes it an ideal counterpart to the rich, savory tahini-soy drizzle.

Achieving perfectly grilled cabbage is simpler than you might think. We aim for a texture that is tender enough to be easily sliced and enjoyed, yet still retains a slight al dente bite. The hallmark of well-grilled cabbage includes those desirable grill marks and a subtle char on the outer leaves, which adds a depth of flavor reminiscent of your favorite barbecue dishes. It’s truly all the best parts of outdoor grilling – the smoky aroma, the delightful char, the satisfying taste – but with all the incredible health benefits of a wholesome vegetable.

The Secret Weapon: Tahini-Soy Drizzle

While the grilled cabbage itself is a triumph, it’s the tahini-soy drizzle that truly elevates this dish from great to extraordinary. This homemade sauce is a harmonious blend of key ingredients, each playing a vital role in its complex flavor profile. We combine rich, savory soy sauce with creamy, nutty tahini, adding a touch of sweetness from honey and a warm, aromatic kick from ground ginger. The result is a sauce that is deeply flavorful, with a perfect balance of savory, sweet, and umami notes that dance on your palate. Its smooth, luscious texture clings beautifully to the tender cabbage wedges, ensuring every bite is an explosion of taste.

When we say this sauce is flavorful, we genuinely mean it! It complements the smokiness of the grilled cabbage in a way that is nothing short of sensational. The tahini provides an earthy depth, the soy sauce brings its signature umami and salinity, the honey adds a balancing sweetness, and the ginger contributes a refreshing, zesty warmth. This incredible versatility means the drizzle isn’t just for cabbage; it’s a fantastic dressing for salads, a marinade for proteins, or a dipping sauce for various appetizers. So, the next time you’re firing up the grill for some Grilled Steak Skewers or Grilled Pineapple BBQ Chicken Kabobs, make sure to include some cabbage and, crucially, this sensational sauce!

Essential Ingredients for Your Grilled Cabbage Journey

For the Perfectly Grilled Cabbage:

  • Cabbage: One medium to large head of green cabbage is all you need, yielding approximately 8 even wedges. Look for a firm, dense head with fresh-looking leaves.
  • Olive Oil: We recommend a high-quality extra virgin olive oil for its rich flavor, which helps the cabbage char beautifully and prevents sticking.
  • Kosher Salt: Just a pinch to enhance the cabbage’s natural flavors. The majority of the seasoning will come from our incredible sauce.
  • Freshly Ground Black Pepper: A crucial ingredient to add a subtle peppery bite. Freshly ground makes a noticeable difference.

For the Irresistible Tahini-Soy Drizzle:

  • Low-Sodium Soy Sauce or Tamari: Essential for that umami depth without making the sauce overly salty. Tamari is an excellent gluten-free alternative.
  • Tahini: This nutty, earthy paste, made from ground sesame seeds, is the heart of the drizzle. It adds incredible richness and depth. You can find it in most major grocery stores in the international or natural foods aisle.
  • Honey: A touch of natural sweetness to balance the savory and nutty flavors. If possible, opt for local organic honey for the best quality and flavor profile.
  • Olive Oil: Used to emulsify the sauce and add a silky texture. Avocado oil can be used as a substitute if olive oil is unavailable.
  • Ginger: Ground ginger is our preferred choice for ease and a smooth sauce without any fibrous texture, while still delivering all that wonderful zingy ginger flavor. Alternatively, very finely minced fresh ginger can be used for a more intense, vibrant kick.

Mastering the Grill: Tips for Perfect Cabbage

Grilling cabbage is straightforward, but a few key tips can ensure outstanding results every time:

  • Even Slices: When cutting the cabbage, ensure all wedges are roughly the same thickness (about 1-inch thick through the core). This promotes even cooking and prevents some pieces from burning while others remain undercooked. Keeping a bit of the core intact on each wedge helps hold the leaves together during grilling.
  • Preheating is Key: Always preheat your grill to medium heat for at least 10-15 minutes. This ensures the grates are hot enough to create those beautiful char marks and cook the cabbage efficiently without steaming it.
  • Oil the Grates, Not Just the Cabbage: While oiling the cabbage is important, oiling the grill grates with a paper towel dipped in high-smoke-point oil (like canola or grapeseed) prevents sticking and helps create a better sear.
  • Don’t Overcrowd the Grill: Give your cabbage wedges space. Overcrowding can lower the grill temperature and lead to steaming instead of grilling, preventing proper charring.
  • Flip Once for Best Grill Marks: Resist the urge to constantly flip. Place the cabbage on the hot grill, let it cook undisturbed for 6-8 minutes until golden brown with good grill marks, then flip and cook the other side.

How to Tell When Your Grilled Cabbage is Perfectly Cooked

Knowing when your grilled cabbage is done is crucial for optimal flavor and texture. Look for these indicators:

  • Slightly Translucent Edges: The outer leaves will begin to appear somewhat translucent around the edges.
  • Softer Texture: The cabbage will lose some of its raw rigidity and become noticeably softer to the touch. You should be able to easily pierce it with a fork.
  • Gentle Curling: The edges of the outer leaves may lightly curl and develop a slight char, indicating caramelization and smoky flavor development.
  • Sweet Aroma: A subtle, sweet aroma will emanate from the grill as the cabbage cooks and its natural sugars caramelize.

The goal is tender-crisp – cooked through but still with a satisfying bite, not mushy.

Storing Grilled Cabbage with Tahini-Soy Drizzle for Freshness

To ensure maximum freshness and flavor, here’s a crucial pro tip: do NOT drizzle the cabbage with the tahini-soy sauce until you’re ready to serve it! This prevents the cabbage from becoming soggy and allows both components to maintain their peak texture and taste.

  • Grilled Cabbage: Once cooked and cooled, store the plain grilled cabbage wedges in an airtight container in the refrigerator for up to 3 days. When ready to serve, you can quickly reheat them on the grill, in a pan, or even in the microwave, then add the fresh drizzle.
  • Tahini-Soy Drizzle: The sauce is very stable and can be prepared ahead of time. Store the tahini-soy drizzle in a separate airtight container (like a sealed jar) in the refrigerator for up to 5 days. Give it a good shake or stir before serving, as some separation may occur.

Recipe Variations and Serving Suggestions

This grilled cabbage recipe is incredibly adaptable. Here are a few ideas to inspire you:

  • Spice it Up: Add a pinch of red pepper flakes to the tahini-soy drizzle for a spicy kick, or brush a little sriracha onto the cabbage before grilling.
  • Herbaceous Touch: Garnish with fresh chopped cilantro, parsley, or green onions for added freshness and color.
  • Citrus Brightness: A squeeze of fresh lime or lemon juice over the finished dish can add a delightful zesty note that cuts through the richness of the sauce.
  • Nutty Crunch: Sprinkle toasted sesame seeds or chopped peanuts over the top just before serving for an extra layer of texture.
  • Make it a Meal: Transform this side dish into a light vegetarian main by serving it over a bed of quinoa or brown rice, perhaps with some grilled tofu or chickpeas.

Grilled Cabbage with Tahini-Soy Drizzle Recipe

By: Julie Chiou

Cabbage is grilled with just a few simple ingredients before being topped with the most mouthwatering homemade sauce EVER!

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Servings: 8 wedges

Equipment

  • Outdoor grill

Ingredients

For the Grilled Cabbage:

  • 1 head of cabbage
  • ¼ cup (59 ml) olive oil
  • 1 teaspoon Kosher salt
  • 1 teaspoon ground black pepper

For the Tahini-Soy Drizzle:

  • ½ – 1 cup (118 ml) low-sodium soy sauce
  • ⅓ cup (80 g) tahini
  • ¼ cup (85 g) honey
  • 1 tablespoon olive oil
  • 2 teaspoons ground ginger or finely minced ginger

Instructions

  1. Oil the grill grates using a paper towel then preheat your grill to medium heat for about 10 minutes before grilling.
  2. In the meantime, remove the tough outer leaves of the cabbage then cut it into 8 equal wedges, ensuring a part of the core remains in each wedge to hold it together.
  3. Brush the tops of the cabbage wedges with some of the remaining olive oil, then sprinkle generously with salt and pepper. Flip the wedges over and repeat the oil, salt, and pepper application on the other side.
  4. Carefully place the seasoned cabbage wedges on the preheated grill. Grill on each side for 6-8 minutes, or until the cabbage has softened, developed nice grill marks, and is slightly charred around the edges.
  5. While the cabbage is grilling, prepare the tahini-soy drizzle. Add ½ cup of the soy sauce and all of the remaining tahini-soy drizzle ingredients (tahini, honey, 1 tablespoon olive oil, and ginger) to a large jar. Seal it with a lid and shake vigorously for 1-2 minutes, or until all of the ingredients are thoroughly combined and smooth. Taste and gradually add more soy sauce, if desired, to reach your preferred consistency and saltiness.
  6. Once the cabbage has cooked through to your desired tenderness, remove it from the grill. Arrange the grilled cabbage wedges on a serving platter and generously drizzle with the homemade tahini-soy sauce. Serve immediately and enjoy!

Notes

These grilled cabbage wedges can be stored in an airtight container in the fridge for up to 3 days. The tahini-soy sauce can be stored separately in an airtight container in the fridge for up to 5 days. For best results, do not dress the cabbage with the sauce until just before serving.
