Key Ingredients for Perfect Strawberry Donuts

The magic of these donuts comes from a few essential ingredients working in harmony:

  • Fresh Strawberries: The star of the show! Use ripe, sweet berries, finely chopped for both the batter and the glaze. This ensures an even distribution of flavor and beautiful specks of red throughout.
  • Buttermilk: This acidic ingredient is crucial for creating a tender, moist crumb. It reacts with the baking soda, giving the donuts their lovely rise and light texture. If you don’t have buttermilk on hand, don’t worry – we have an easy substitution trick!
  • All-Purpose Flour: The foundation of our donut batter, providing structure and chewiness.
  • Granulated Sugar: Sweetens the donuts and helps with browning.
  • Baking Soda & Salt: Essential leavening and flavor enhancers.
  • Vegetable Oil: Provides moisture without adding a strong flavor, keeping the donuts light.
  • Egg & Vanilla Extract: Bind the ingredients, add richness, and enhance the overall flavor profile.
  • Powdered Sugar (for glaze): Creates a smooth, sweet base for our strawberry glaze.

How to Make Baked Strawberry Donuts: A Step-by-Step Guide

Creating these heavenly strawberry donuts is a straightforward process. Follow these detailed steps for guaranteed success:

  • 1. Prepare Your Workspace: Begin by preheating your oven to 350 degrees Fahrenheit (177°C). Thoroughly grease a donut baking pan with non-stick spray, ensuring every cavity is well coated. This step is crucial to prevent sticking and ensure your donuts release easily. Set the prepared pan aside.
  • 2. Whisk Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt. Use a whisk to thoroughly combine these ingredients, ensuring there are no lumps and the leavening agent is evenly distributed. This helps create a uniform crumb in your donuts.

  • 3. Combine Wet Ingredients: In a large measuring cup or a separate bowl, stir together the vegetable oil, buttermilk, egg, and vanilla extract until they are well combined and smooth.
  • 4. Mix Batter Gently: Pour the wet ingredients into the bowl with the dry ingredients. Mix until just combined. It’s important not to overmix the batter; overmixing can lead to tough donuts. A few small lumps of flour are acceptable. Use a spatula to scrape down the sides and bottom of the bowl, ensuring all ingredients are fully incorporated without excessive stirring.
  • 5. Fold in Strawberries: Gently fold the finely chopped fresh strawberries into the donut batter using a spatula. Distribute them evenly throughout the batter.

  • 6. Pipe Batter into Pan: For neat and uniform donuts, carefully transfer the batter into a piping bag fitted with a large round tip, or simply use a large plastic freezer bag with one corner snipped off. Pipe the batter into each donut cavity, filling them about two-thirds of the way full. This allows room for them to rise without overflowing. After piping, gently tap the donut pan against the counter a few times to release any air bubbles.
  • 7. Bake to Perfection: Place the donut pan into the preheated oven and bake for 13-15 minutes. The donuts are done when a toothpick inserted into the thickest part comes out clean, and the edges are lightly golden brown. They should also spring back slightly when gently touched.
  • 8. Cool Completely: Remove the donuts from the oven and let them cool in the pan for about 5 minutes before carefully inverting them onto a wire cooling rack. Allow them to cool completely before glazing. This step is crucial; if you glaze warm donuts, the glaze will simply melt and run off.
  • 9. Prepare the Strawberry Glaze: While the donuts are cooling, prepare the glorious strawberry glaze. In a medium mixing bowl, whisk together the powdered sugar and milk until perfectly smooth and free of any lumps. Then, gently stir in the remaining finely chopped fresh strawberries. The small pieces of fruit add both flavor and a beautiful visual appeal.
  • 10. Dip and Glaze: Once the donuts are completely cool, take each donut and dip it, top-side down, into the strawberry glaze. Allow any excess glaze to drip off before placing the glazed donut face-up on the wire rack. The glaze will harden slightly as it sets, creating a delightful sugary coating.
  • 11. Serve and Savor: Allow the glaze to set for a few minutes, then serve your beautiful homemade baked strawberry donuts immediately. Enjoy the fresh, vibrant taste of summer!

Tips for the Best Baked Strawberry Donuts

  • Room Temperature Ingredients: Ensure your egg and buttermilk are at room temperature. This helps them incorporate more smoothly into the batter, leading to a more consistent and tender donut.
  • Don’t Overmix: As with most baked goods, overmixing develops the gluten in the flour, resulting in tough donuts. Mix until just combined.
  • Finely Chop Strawberries: For both the batter and the glaze, finely chop the strawberries. This prevents large chunks that can make the donuts dense or cause the glaze to break apart.
  • Grease Your Pan Well: A well-greased donut pan is key to easy release. You can use non-stick spray or brush with melted butter.
  • Use a Piping Bag: While you can spoon batter into the pan, a piping bag (or a Ziploc with the corner cut) makes the process much cleaner and ensures uniform donut shapes.
  • Cool Completely Before Glazing: Patience is key! Warm donuts will melt the glaze, leading to a runny, uneven coating.
  • Adjust Glaze Consistency: If your glaze is too thick, add milk a tiny bit at a time. If it’s too thin, add a little more powdered sugar until it reaches your desired dipping consistency.

Variations and Substitutions to Explore

This recipe is wonderfully versatile, allowing you to get creative with your flavors:

  • Using Other Berries: Feel free to experiment with other fresh berries! Blueberries, raspberries, or a mix of “triple berry” (strawberries, blueberries, raspberries) would work beautifully. For a patriotic treat, combine blueberries and strawberries, perfect for holidays like the 4th of July.
  • No Buttermilk? No Problem! If you don’t have buttermilk on hand, you can easily make your own. Simply measure out 1 cup of regular milk (dairy or non-dairy), then add 1 tablespoon of fresh lemon juice or white vinegar. Stir it gently and let it sit for about 5-10 minutes. The milk will curdle slightly, and voilà – you have a perfect buttermilk substitute!
  • Add Citrus Zest: For an extra layer of brightness, grate in some lemon or orange zest with the dry ingredients. Citrus pairs wonderfully with strawberries.
  • Different Glazes: While our strawberry glaze is divine, you could also try a simple vanilla glaze, a cream cheese glaze, or even a chocolate drizzle for a more decadent treat.
  • Strawberry Jam Swirl: For an even more intense strawberry flavor, you could swirl a teaspoon of high-quality strawberry jam into the batter before baking.

Storage Instructions for Freshness

These baked strawberry donuts are undeniably at their absolute best when enjoyed fresh, ideally on the day they are made. The tender texture and vibrant glaze truly shine. However, if you happen to have any delicious leftovers (a rare occurrence!), they can be stored to maintain their delightful quality.

Place the donuts in an airtight container at room temperature. They will remain fresh and delicious for up to 3 days. To prevent the glaze from becoming too absorbed into the donut over time, a smart tip is to store the glaze separately if you anticipate having leftovers. You can then dip the donuts right before serving, ensuring each bite is as fresh and perfectly coated as possible.

For longer storage, unglazed donuts can be frozen for up to 2-3 months. Simply thaw them at room temperature and then apply the fresh glaze just before serving.

Notes

These are best served fresh, however, if you have any leftovers, place them in an airtight container at room temperature for up to three days.

I use Wilton piping bags, with a 2A piping tip for my donuts. Keep the tip pointed up until you are ready to pipe, or the batter will run through. You can also use a condiment bottle with a large nozzle/opening for piping.

Frequently Asked Questions About Baked Strawberry Donuts

Can I use frozen strawberries?

While fresh strawberries are highly recommended for their vibrant flavor and texture, you can use frozen strawberries in a pinch. If using frozen, make sure to thaw them completely and drain any excess liquid before chopping and adding them to the batter and glaze. This prevents the batter from becoming too watery.

Why did my donuts turn out tough?

Tough donuts are usually a sign of overmixing the batter. When flour is overmixed, the gluten develops too much, leading to a dense, chewy, rather than soft and tender, texture. Mix until just combined, and stop as soon as you no longer see streaks of dry flour.

My glaze is too thick/thin. How do I fix it?

The perfect glaze consistency is key for dipping. If your glaze is too thick, add more milk (or a tiny bit of water) a quarter teaspoon at a time until it reaches a pourable but still opaque consistency. If it’s too thin, gradually whisk in more powdered sugar until it thickens up to your liking.

Can these donuts be made ahead of time?

Baked donuts are best enjoyed on the day they’re made for optimal freshness and texture. However, they can be stored in an airtight container at room temperature for up to 3 days. For best results with storage, you can bake the donuts, let them cool completely, and then glaze them just before serving.
