This incredibly creamy fig and honey mascarpone ice cream is the perfect way to celebrate fig season!

  • 1 ½ cups (355 ml) heavy cream
  • 1 ½ cups (355 ml) half and half
  • 10 ounces (284 g) mascarpone cheese
  • 1 cup (237 g) fig puree, see note below
  • 1 cup (224 g) fig preserves
  • ½ teaspoon vanilla bean paste
  • ⅓ cup (113 g) of honey
  • 2 tablespoons granulated sugar
  • 4-6 figs, chopped

Instructions

  1. In a saucepot over medium heat, combine all ingredients (heavy cream, half and half, mascarpone, fig puree, fig preserves, vanilla bean paste, honey, and granulated sugar). Gently heat and stir occasionally to fully incorporate everything until the mascarpone cheese has completely melted and no lumps remain. The fig preserves chunks will remain, adding delightful texture.
