Goat Cheese Pesto Chicken Sandwich

Ingredients

  • ¾ cup (90 g) Italian seasoned breadcrumbs
  • 2 eggs
  • ¼ cup (59 ml) buttermilk
  • 4 pieces chicken tenderloins, pounded out to thin, flat
  • 2 tablespoons olive oil, divided
  • Salt and pepper, to taste
  • 4 ounces (113 g) goat cheese, softened
  • 4 tablespoons basil pesto, homemade or store-bought
  • Large loaf of bread, cut in half then half again lengthwise for two sub rolls

Instructions

  • Prepare your breading stations: in one shallow container, add the Italian seasoned breadcrumbs. In a second shallow container, whisk together the eggs and buttermilk until well combined.
    3/4 cup (90 g) Italian seasoned breadcrumbs, 2 eggs, 1/4 cup (59 ml) buttermilk
  • Take each flattened chicken tenderloin piece and dip both sides thoroughly into the egg and buttermilk mixture. Then, transfer it to the breadcrumbs, ensuring it’s completely coated. Gently shake off any excess breadcrumbs. Repeat this process for all chicken pieces.

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, carefully place two breaded chicken pieces into the skillet. Repeat with the remaining two chicken pieces and the other 1 tablespoon of olive oil.

  • Take one half of a sub roll and generously spread half of the goat cheese pesto mixture onto one side. On the other side of the bread, arrange two cooked chicken cutlets. Press both halves of the bread together firmly to form a sandwich, then cut in half for easier handling. Repeat this process with the remaining chicken cutlets and bread.
