    Brussels sprouts, (thinly slice half then trim and halve the other half and roast, see notes below for roasting instructions)

  • 1 cup
    (200 g)
    quick cook farro

  • ½ cup
    (118 ml)
    Dijon shallot dressing

  • ½ cup
    (60 g)
    whole, roasted hazelnuts, roughly chopped (can be salted or unsalted, whichever you prefer)



  • Salt and pepper, to taste

Instructions

  • While the whole Brussels sprouts are roasting (refer to notes for roasting instructions), cook the farro according to the package directions. Most quick-cook farro varieties are ready in about 10 minutes.
    1 cup (200 g) quick cook farro,
    1 pound (454 g) Brussels sprouts
  • In the meantime, prepare your Dijon shallot dressing and set it aside. Also, roughly chop the roasted hazelnuts.
    1/2 cup (118 ml) Dijon shallot dressing,
    1/2 cup (60 g) whole, roasted hazelnuts
  • Once the farro is cooked and the roasted Brussels sprouts are done, combine all the ingredients – the cooked farro, roasted Brussels sprouts, chopped hazelnuts, and the raw shredded Brussels sprouts – in a large bowl. The residual heat from the warm farro and roasted sprouts will gently “cook” and slightly soften the shaved Brussels sprouts, infusing them with flavor.
  • Drizzle the prepared Dijon shallot dressing generously over the salad and toss everything thoroughly to ensure an even coating. Season with salt and freshly ground black pepper to taste.
