Gourmet Seared Scallops with Spicy Curry Sauce and Sesame Couscous

Remember that incredible trip to Nashville? Back in July, I had the pleasure of exploring the city’s fantastic culinary scene, and one particular dish stood out above the rest: the legendary “King Kong Couscous” from Silly Goose. My friends and I were absolutely blown away by its innovative combination of flavors and textures. From the moment the first bite hit my palate, I knew I had to try and recreate this masterpiece at home. I promised myself—and you all—that I’d share the recipe “soon.” Well, “soon” sometimes takes a little longer than planned, but I assure you, this recipe was worth the wait!

Replicating a restaurant favorite is always a thrilling challenge. It involves dissecting the flavors, guessing the ingredients, and many rounds of testing to achieve that perfect balance. The original dish featured shrimp, but in my rendition, I opted for succulent scallops. Their delicate sweetness and firm texture provide a luxurious contrast to the bold, spicy curry sauce. This seemingly small change elevates the dish, making it feel even more special and perfect for a gourmet home-cooked meal.

The Inspiration: Reimagining Nashville’s “King Kong Couscous”

The name “King Kong Couscous” certainly sparks curiosity, doesn’t it? While incredibly memorable and unique, I decided to rename my recreation to something that more accurately describes the delectable elements within. “Scallops with Spicy Curry Sauce and Couscous” might sound a bit more straightforward, but it precisely communicates the star ingredients and the core flavor profile, making it more approachable for anyone searching for a truly exceptional seafood dish. This rename also helps immensely with search engine optimization, guiding food enthusiasts directly to the heart of what makes this recipe so irresistible.

This dish is a testament to how simple ingredients, when thoughtfully combined, can yield extraordinary results. The spicy curry sauce, which I painstakingly developed to mimic Silly Goose’s original, is the soul of this recipe. It’s rich, creamy, and boasts a fantastic kick that beautifully complements the tender scallops. What’s more, this sauce makes a generous batch, allowing for delightful leftovers – we even found ourselves dipping chips into it! (Don’t knock it till you try it, seriously!) The couscous, too, received a special touch. Infused with aromatic sesame oil, it transcends its usual role as a side, becoming an integral part of the dish with a subtle, yet distinct, Asian-inspired flavor.

Essential Ingredients for Success

Crafting this incredible dish relies on a few key ingredients. For the curry sauce, a high-quality full-fat coconut milk provides the essential creamy base, while ground cumin, coriander, and a touch of curry powder build its aromatic foundation. Sriracha sauce introduces that delightful spicy kick, which can be adjusted to your preference. For the couscous, instant couscous is a fantastic time-saver, absorbing the savory notes of sesame oil and fresh water. And of course, the star of the show: large, fresh scallops. When selecting scallops, look for dry-packed varieties if possible, as they sear better and have a purer flavor.

The beauty of this recipe lies in how these components harmonize. The earthy spices in the curry sauce are balanced by the sweet, oceanic flavor of the perfectly seared scallops. The light, fluffy couscous, subtly flavored with sesame, provides an ideal canvas for the rich sauce and delicate protein. It’s a complete meal in one, delivering a sophisticated palate experience with minimal effort.

  • 2 tablespoon

  • 2 tablespoon
    olive oil
  • 8
    large scallops

  • Salt + pepper, to taste

Instructions

  • In a medium bowl, whisk together coconut milk, cumin, coriander, curry powder, sriracha, and salt. Set aside.
13.66 ounce (387 ml) can of coconut milk,
    1 teaspoon ground cumin,
    1 teaspoon ground coriander,
    1/4 teaspoon curry powder,
    1 1/2 tablespoon sriracha sauce,
    1/2 teaspoon salt
  • In a small saucepan, bring the cup of water and sesame oil to a boil. Remove the saucepan from the heat then stir the couscous in and cover pot. Let sit for 10-15 minutes then take a fork and fluff the couscous and sprinkle with 1/2 tsp. of salt and parsley. Keep warm.
    2 tablespoon sesame oil,
    1 cup (237 ml) water,
    1 cup (173 g) instant couscous,
    1/2 teaspoon salt,
    2 tablespoon parsley
  • In a skillet, heat up the olive oil over medium-high heat. Place scallops in the pan; it should be a nice sizzle. Season the tops of the scallops with salt and pepper (a pinch of each). Sear scallops until browned on either side, about 3-4 minutes on each side. You don’t want to overcook them or they’ll be too tough.

    8 large scallops,
    Salt + pepper
  • To assemble the dish, scoop couscous onto a plate, place scallops on top, then drizzle curry sauce all over.

Tips for Achieving Perfect Seared Scallops

The key to truly delicious scallops is a perfect sear. This creates a beautiful caramelized crust on the outside while keeping the inside tender and juicy. Here are a few essential tips:

  • **Pat Them Dry:** This is crucial! Moisture is the enemy of a good sear. Thoroughly pat your scallops dry with paper towels before seasoning. Any surface moisture will steam the scallops instead of searing them, resulting in a rubbery texture.
  • **High Heat, Quick Cook:** Scallops cook very quickly. Ensure your skillet (preferably cast iron or stainless steel) is piping hot before adding the oil. Once the oil shimmers, add the scallops.
  • **Don’t Overcrowd the Pan:** Cook scallops in batches if necessary. Overcrowding lowers the pan’s temperature and prevents proper searing. Give each scallop ample space.
  • **Season Simply:** A pinch of salt and pepper on each side is all you need to enhance their natural sweetness.
  • **Resist the Urge to Move Them:** Once the scallops are in the pan, leave them undisturbed for about 2-3 minutes per side until they develop a deep golden-brown crust. Flipping them too soon will prevent caramelization.
  • **Know When They’re Done:** Scallops should be opaque throughout with a slight translucency in the very center. They should feel firm but still yield slightly when gently pressed. Overcooked scallops become tough and chewy.

Crafting the Irresistible Spicy Curry Sauce

This curry sauce is what truly sets this dish apart. Its vibrant, creamy, and spicy profile perfectly complements the delicate scallops. To make it, you’ll simply whisk together full-fat coconut milk with a blend of ground cumin, coriander, and curry powder. The sriracha adds a fantastic chili kick, but feel free to adjust the amount to suit your spice preference. A touch of salt brings all the flavors into harmony. The great thing about this sauce is its versatility; beyond scallops, it pairs wonderfully with shrimp, chicken, or even firm white fish. It’s also incredibly delicious as a dipping sauce for bread or even crispy chips, as we discovered!

Elevating Your Couscous: The Sesame Twist

While often seen as a simple side, couscous in this recipe gets a flavorful upgrade with a hint of Asian inspiration. By cooking instant couscous in water infused with fragrant sesame oil and a pinch of salt, you transform it into an aromatic, fluffy bed that supports the main components beautifully. Once cooked and fluffed, a scattering of fresh, finely chopped parsley adds a burst of color and herbaceous freshness. This sesame couscous isn’t just a filler; it’s an integral part of the dish, providing a light, nutty, and perfectly textured counterpoint to the rich curry and tender scallops.

Serving Suggestions and Perfect Pairings

Once you’ve perfectly seared your scallops and prepared your flavorful couscous and spicy curry sauce, it’s time to assemble this magnificent dish. Arrange a generous scoop of the sesame couscous on each plate, nestle the glistening scallops on top, and then lavishly drizzle with the creamy curry sauce. For an extra touch of elegance and freshness, consider garnishing with a sprinkle of additional fresh parsley or a few cilantro leaves. A wedge of lime on the side would also offer a bright, zesty counterpoint.

To complete your dining experience, pair this dish with a crisp, dry white wine like a Sauvignon Blanc or a Pinot Grigio, which will cut through the richness of the curry and complement the seafood. For a non-alcoholic option, iced green tea or sparkling water with a hint of citrus would be delightful. This dish is hearty enough to be a stand-alone meal, but if you desire a vegetable accompaniment, a simple side salad with a light vinaigrette or some steamed asparagus would be excellent choices.
