The Magic Behind This Easy Stovetop Butter Chicken Recipe
If you’ve ever thought about diving into the wonderful world of Indian cooking but felt intimidated, this homemade butter chicken recipe is your perfect starting point. It’s incredibly forgiving and promises restaurant-quality results without requiring hours in the kitchen or complex techniques. Here’s why this particular recipe stands out:
- Unforgettable Flavors: The taste is simply sensational. We’re talking about a symphony of authentic Indian spices like garam masala, coriander, and cumin, carefully balanced to create a deeply aromatic and warming profile. Each bite feels like a comforting embrace, a culinary hug for your soul. The rich tomato base, combined with the creamy yogurt marinade and a touch of heavy cream, results in a sauce that is both tangy and luxurious.
- Perfect for Beginners: Many people shy away from cooking Indian food at home, assuming it’s too complicated. This recipe debunks that myth entirely. It uses readily available ingredients and straightforward stovetop techniques, making it ideal for novice cooks and seasoned chefs alike. No fancy equipment or obscure methods are needed to achieve this authentic taste.
- Effortless & Quick Preparation: Despite its complex flavor, this dish comes together remarkably fast on the stovetop. While there’s a recommended marinating time for the chicken, the active cooking time is minimal. You can easily prep the chicken in the morning, let it soak up all those delicious spices, and then whip up dinner in under 30 minutes in the evening. It’s perfect for busy weeknights when you crave something special.
We absolutely adore serving this butter chicken over fluffy basmati rice, allowing every grain to soak up the glorious, creamy sauce. And, of course, no Indian meal is complete without warm, pillowy naan bread for scooping up every last drop!

The Art of the Marinade: Flavor and Tenderness
One of the secrets to truly outstanding butter chicken lies in the marinade. Our recipe calls for marinating boneless, skinless chicken breast in a mix of tandoori paste, grated ginger, minced garlic, and a blend of chili powder, coriander powder, ground cumin, and garam masala, all bound together with plain Greek yogurt. The yogurt plays a crucial role not only in imparting a lovely tang but also in tenderizing the chicken, ensuring it remains incredibly moist and flavorful during cooking. You can marinate the chicken for as little as an hour if you’re short on time, but for the best results, letting it chill for 6-8 hours or even overnight allows the flavors to deeply penetrate the chicken, making every bite more succulent and aromatic.
This dish holds a special place in my heart, often transporting me back to my unforgettable trip to London. My husband, Jason, and I still rave about the Indian dinner we had at Dishoom. It was, hands down, one of the best meals of my life—a truly magical culinary experience that we still dream about, talk about, and recommend to everyone we meet. Since I can’t have Dishoom here in the States, this stovetop butter chicken recipe has become my go-to for recreating a piece of that London magic right in my own kitchen. It’s a fantastic stand-in until I can finally make my way back to England for another visit!

Tips for Mastering Your Stovetop Butter Chicken
- Quality Spices Make a Difference: Fresh, high-quality spices are key to the depth of flavor in Indian cuisine. While pre-ground spices are convenient, if you have whole spices, grinding them fresh will elevate your dish significantly.
- Don’t Rush the Onions: Cooking the onions until they are tender and slightly caramelized adds a crucial layer of sweetness and depth to the sauce. Don’t be tempted to cut this step short.
- Adjust to Your Heat Preference: The recipe uses chili powder, but if you love a bit more kick, don’t hesitate to add that optional pinch of cayenne pepper. For a milder version, you can slightly reduce the chili powder.
- Simmer for Flavor Development: Allowing the chicken and sauce to simmer gently for the recommended time helps all the flavors meld together beautifully and ensures the chicken is cooked through and tender.
- Serving Suggestions Beyond Basics: While basmati rice and naan are classic accompaniments, consider adding a dollop of fresh plain yogurt or raita (cucumber yogurt dip) to cool the palate. A sprinkle of fresh cilantro for garnish also adds a burst of freshness and color.
Beyond this fantastic stovetop butter chicken, you might also enjoy exploring other Indian-inspired dishes. Equipment
-
Dutch oven or large skillet
Ingredients
For the chicken marinade
- 1 pound (454 g) boneless, skinless chicken breast, cubed into 1″ cubes
- 2 tablespoons tandoori paste
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 ½ tablespoon coriander powder
- 1 ½ teaspoon ground cumin
- ½ teaspoon garam masala
- ½ cup (100 g) plain greek yogurt
For the rest of the dish
- 2-4 tablespoons (28 g) unsalted butter
- 1 medium onion, sliced or diced
- 14.5 ounce (411 g) can crushed tomatoes
- ½ cup (118 ml) heavy cream
- Salt and pepper, to taste
- Pinch of cayenne for extra heat, optional
Instructions
-
Place the cubed chicken into a large resealable plastic bag. In a separate bowl, whisk together the tandoori paste, grated ginger, minced garlic, chili powder, coriander powder, ground cumin, garam masala, and plain Greek yogurt. Pour this marinade into the plastic bag with the chicken. Seal the bag and, using your hands, massage and mix the chicken until all pieces are thoroughly coated. For best flavor and tenderness, marinate for 6-8 hours or overnight in the refrigerator. If you’re short on time, even 30 minutes will improve the flavor.
-
When ready to cook, heat a large Dutch oven or skillet over medium-high heat. Add the unsalted butter and let it melt.
-
Once the butter is melted and slightly shimmering, add the sliced or diced onion. Cook, stirring occasionally, until the onions are tender and translucent, about 3-5 minutes. Be careful not to burn them.
-
Carefully add the marinated chicken and any remaining marinade from the bag into the skillet with the onions. Stir well to incorporate. Next, pour in the crushed tomatoes and stir again to combine all ingredients.
-
Bring the mixture to a gentle simmer, then reduce the heat to medium and cook uncovered for about 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Stir occasionally to prevent sticking.
-
Stir in the heavy cream and continue to simmer for an additional 5 minutes. This will add richness and a beautiful, creamy consistency to your butter chicken.
-
Season with salt and freshly ground black pepper to taste. If you desire a spicier dish, now is the time to add an optional pinch of cayenne pepper. Stir well.
-
Serve your delicious homemade Stovetop Butter Chicken hot over a bed of fluffy basmati rice and with warm naan bread for dipping. Garnish with fresh cilantro if desired.
