  • ¼ cup (50 g) granulated sugar
  • cup (82 g) pumpkin puree
  • 1 large egg
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Adjust oven racks to the middle position and preheat your oven to 350 °F (177 °C). Prepare a 9×9 inch baking pan by lining it with parchment paper, ensuring about a one-inch overhang on two opposite sides for easy lifting. Lightly spray the parchment paper with non-stick baking spray and set the pan aside.
  2. In a large bowl, whisk together the Dutch-processed cocoa, instant espresso (if using), and boiling water until the mixture is completely smooth. This creates a rich chocolate base. Add the finely chopped unsweetened chocolate and continue to whisk until it has fully melted and incorporated into the mixture. Next, whisk in the melted unsalted butter and vegetable oil. Don’t worry if the mixture appears a bit separated or “funky” at this stage; it will come together.
  3. In the same bowl, add the large eggs, egg yolks, and vanilla extract. Whisk thoroughly until the entire mixture is smooth, glossy, and everything is perfectly combined.
