For the cake:
- 1 ½ cups (341 g) unsalted butter, room temperature
- 2 cups (400 g) granulated sugar
- 3 large eggs
- 3 egg yolks
- 1 teaspoon vanilla extract
- 3 cups (375 g) + 2 tablespoons cake flour
- 1 ½ teaspoon baking powder
- ⅛ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (236 ml) 2% milk
- 1 ¼ cup (185 g) fresh blueberries, do not use frozen
For the lavender simple syrup:
- ¼ cup (59 ml) water
- ¼ cup (50 g) granulated sugar
- 2 tablespoon dried lavender, muddled
For the blueberry buttercream:
- 1 cup (227 g) unsalted butter, room temperature
- 2 ½ cups (300 g) confectioners sugar
- 2 tablespoon 2% milk
- 15 fresh blueberries, do not use frozen

Preheat oven to 350 °F (177 °C). Butter and flour two 8-inch round baking pans. For easier removal, place an 8-inch round piece of parchment paper into the bottom of each cake pan as well. Set aside.

In the bowl of a stand mixer, fitted with the paddle attachment, beat the softened butter and granulated sugar until the mixture becomes light and fluffy, usually about 5 minutes. Remember to scrape down the sides of the bowl as needed to ensure even mixing. In a separate small bowl, whisk together the eggs, egg yolks, and vanilla extract. With the mixer on low speed, gently pour this egg mixture into the butter mixture and continue to mix just until it’s incorporated.

In a large bowl, whisk together the 3 cups of cake flour, baking powder, baking soda, and salt. This ensures all the dry ingredients are evenly distributed.

Gradually add the dry mixture to the wet mixture, alternating with the milk. Begin by adding 1/3 of the flour mixture to the butter mixture and gently mix until just combined. Then, add half of the milk and mix until incorporated. Follow with another 1/3 of the flour mixture, then the remaining milk, mixing after each addition. Finally, add the last 1/3 of the flour mixture and mix until everything is well incorporated and the batter is smooth. Be careful not to overmix, as this can lead to a tough cake.

Prepare the fresh blueberries by tossing them with the remaining 2 tablespoons of cake flour until they are lightly coated. This step helps prevent the blueberries from sinking to the bottom of the cake during baking. Gently fold the flour-covered blueberries into the cake batter using a spatula, taking care not to burst them.

Divide the prepared batter evenly between the two 8-inch baking pans. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Once baked, let the cakes cool in the pans for about 15 minutes before inverting them onto a wire cooling rack to cool completely.

While the cakes are baking and cooling, prepare the lavender simple syrup. In a small saucepan, combine the water and granulated sugar. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar has completely dissolved. Remove from heat, add the dried lavender, and use the back of a wooden spoon to gently muddle (crush) the lavender. This action helps release its fragrant oils and flavor into the syrup. Let the syrup steep for 30 minutes to allow the lavender flavor to fully infuse. Strain the lavender from the syrup before using.

Next, make the blueberry buttercream. In the bowl of a stand mixer (or using a hand mixer), cream together the room temperature unsalted butter, confectioners sugar, and milk until light and fluffy. With the mixer running on low speed, slowly add the fresh blueberries. They will burst, imparting a beautiful light purple hue and delicious fruit flavor to the buttercream, and you’ll see delightful flecks of blueberries throughout. If the buttercream is too thick, add more milk, 1 teaspoon at a time, until you reach your desired consistency. If it’s too runny, gradually add more confectioners sugar.

Once the cake layers have cooled completely, it’s time to assemble. Carefully place one cake layer on your chosen cake stand. For a clean presentation, place several strips of wax paper underneath the edges of the cake, around the perimeter of the cake stand. These can be removed once you’ve finished frosting, leaving your cake stand spotless.

Pour half of the strained lavender simple syrup evenly over the top of the first cake layer. Allow a few minutes for the syrup to soak in and moisten the cake.

Using an offset spatula, spread a generous amount of blueberry buttercream in the middle of the first cake layer. Work your way from the center outwards, spreading the buttercream evenly, leaving about a 1-inch border.

Gently place the second cake layer on top of the first. Pour the remaining half of the lavender simple syrup over this top layer, allowing it to soak in for a few minutes. Then, place a generous amount of buttercream in the center of the top layer. Again, work from the middle outwards, spreading the buttercream evenly across the top and down the sides, covering the entire cake with a smooth, elegant finish.

If someone doesn’t truly care about nurturing a connection with me, why should I constantly be the one eager to engage and spend time with them? I firmly believe that any healthy relationship, be it familial or platonic, should be a two-way street. Authentic connections are built on mutual respect, effort, and unwavering presence, regardless of life’s fluctuating tides.
