  • ¼ teaspoon chipotle powder
  • Salt and pepper, to taste
  • 2 large sweet potatoes or 4 cups peeled and cut into 2-inch cubes
  • 15.5 ounce (439 g) can of black beans, drained and rinsed
  • 15.5 ounce (439 g) can of light red kidney beans, drained and rinsed
  • 14.5 ounce (411 g) can of diced fire roasted tomatoes, undrained
  • 10 ounce (284 g) can of diced tomatoes and green chilies, undrained
  • 1 ¼ cups (296 ml) water
  • Green scallions, for garnish (optional)

Instructions

  1. In a 5.5 quart Dutch oven, cook the diced applewood smoked thick-cut bacon over medium-high heat until it is deliciously crispy. Once cooked, transfer the bacon to a plate lined with a few sheets of paper towels to drain excess fat. Set aside the crispy bacon for garnish later.
  2. Reduce the heat to medium. Using 1-2 tablespoons of the rendered bacon fat (discard the rest or save for other uses), sauté the diced yellow onion, green bell pepper, and minced garlic in the same Dutch oven. Cook for about 5-7 minutes, or until the vegetables have softened and become wonderfully fragrant.
