While many might be lamenting the end of summer, we believe the best part of the season is still here! Technically, summer graces us until the 22nd, which means there’s still ample opportunity to embrace warm weather cooking and enjoy the great outdoors. What better way to celebrate these lingering days than with a dish that combines convenience, incredible flavor, and minimal cleanup? Introducing our mouth-watering one-skillet BBQ chicken & vegetables, designed for busy weeknights but delicious enough for any occasion!

The Undeniable Charm of One-Skillet Meals
There’s a reason one-skillet meals are a perennial favorite in kitchens everywhere: they simply make life easier. Imagine tossing all your ingredients into a single pan, letting them cook together in harmony, and then emerging with a complete, flavorful dish. This isn’t just about reducing your post-dinner dish-washing duties – though that’s certainly a major perk! It’s also about the beautiful synergy of flavors that develops when ingredients meld and mingle in one space. The chicken juices infuse the vegetables, the BBQ sauce caramelizes around everything, creating a depth of taste that’s hard to achieve with separate preparations. It’s a marriage of deliciousness, a true culinary win-win for efficiency and taste.

For this BBQ chicken and vegetables recipe, whether you’re using your oven or firing up the grill, this foil transforms cleanup from a chore into a breeze. It’s frustrating, messy, and simply not how cooking should be.
With Reynolds Wrap® Non-Stick Foil, those struggles become a distant memory. I used it to cover my skillet, and when it came time to unveil our meal, the chicken and vegetables lifted away cleanly, without a single piece sticking. This isn’t just a small convenience; it’s a game-changer for maintaining the integrity of your meal and ensuring every bite makes it to your plate. Its reliable non-stick surface means no more wrestling with stuck-on food and no more arduous scrubbing. It genuinely makes cooking and cleanup significantly easier, allowing you to spend more time savoring your meal and less time at the sink.

Crafting Your Own Kansas-Style BBQ Sauce
The heart of this dish lies in its robust Kansas-Style BBQ sauce. Forget bland, store-bought options; whipping up your own sauce is surprisingly simple and yields a deeply complex flavor profile that elevates the entire meal. This classic sauce balances sweet, tangy, and savory notes with a hint of smoky spice. We start with a ketchup base for that familiar sweetness and body, then introduce molasses for a rich, deep sweetness and a sticky texture. Apple cider vinegar provides the essential tang that cuts through the richness, while garlic powder adds an aromatic warmth. The secret weapon for that authentic BBQ depth is liquid smoke, delivering a campfire essence without needing hours of smoking.
Dark brown sugar enhances the sweetness and aids in caramelization, creating that irresistible glazed finish on the chicken. Finally, a touch of cayenne pepper provides a subtle kick, and salt and pepper round out the seasoning, ensuring every bite is perfectly balanced. Whisking these ingredients together takes mere minutes, and the result is a vibrant, flavorful sauce that transforms ordinary chicken and vegetables into an extraordinary meal. This homemade touch truly sets our one-skillet BBQ chicken apart from the rest.
Choosing and Prepping Your Vegetables for Perfection
The beauty of this one-skillet meal extends to the choice of vegetables, which are not only complementary in flavor but also robust enough to withstand the cooking process alongside the chicken. We opt for medium baking potatoes, cut into quarters, which become wonderfully tender and slightly crispy at the edges. Brussels sprouts, halved, caramelize beautifully, developing a sweet, nutty flavor that even skeptics will adore. Large carrots, chopped into 1-inch chunks, add a vibrant color and natural sweetness, softening to a delightful tenderness.
These vegetables are chosen for their ability to cook evenly and absorb the delicious BBQ flavors. When arranged in the cast iron skillet, they create a colorful bed for the chicken, ensuring everything cooks together harmoniously. You can certainly customize your vegetable selection based on seasonality or preference – bell peppers, red onion wedges, or even zucchini could make fantastic additions. Just ensure they are cut into pieces that will cook in roughly the same amount of time as the chicken and potatoes for an even bake or grill.
Grill or Oven: Versatility for Any Season
One of the best features of this one-skillet BBQ chicken and vegetables recipe is its incredible versatility. While it’s perfect for those last-gasp grilling days of summer, it transitions seamlessly into an oven-baked dish when the weather turns chilly or if you simply prefer indoor cooking. This means you can enjoy this hearty, flavorful meal year-round, regardless of your cooking setup or the forecast.
Grilling Method: Cooking this dish on an outdoor grill infuses it with an extra layer of smoky flavor that perfectly complements the BBQ sauce. The cast iron skillet performs wonderfully on the grill, distributing heat evenly. The initial covered cooking period allows the chicken and vegetables to steam and tenderize, while removing the foil for the last 15 minutes lets the chicken skin crisp up and the sauce caramelize beautifully. Maintain a medium heat, and let the grill do the work, transforming your ingredients into a delectable outdoor feast.
Oven Method: For an equally delicious alternative, baking this dish in the oven is just as straightforward. The principles remain the same: cover the skillet with Reynolds Wrap® Non-Stick Foil to lock in moisture and tenderness, then remove it towards the end to allow for a lovely golden finish. Baking at 400°F ensures everything cooks thoroughly and develops those desirable roasted textures. The oven provides a consistent, controlled environment, making it an excellent option for busy weeknights when you want a hands-off approach to dinner. Whichever method you choose, the outcome is a remarkably flavorful and easy meal that will satisfy everyone at your table.

Equipment
-
Cast iron skillet
-
Outdoor grill
Ingredients
For the Kansas-Style BBQ Sauce
- ¾ cup (180 g) ketchup
- 1 tablespoon molasses
- 2 teaspoon apple cider vinegar
- ½ teaspoon garlic powder
- ½ teaspoon liquid smoke
- 2 tablespoons dark brown sugar
- ⅛ teaspoon cayenne pepper
- ½ teaspoon salt
- ½ teaspoon pepper
For the rest of the dish
- 2 medium baking potatoes, cut into quarters
- 6 brussels sprouts, halved
- 3 large carrots, cut into 1-inch chunks
- 1 ½ pounds (680 g) of boneless, skinless chicken thighs
Instructions
-
1. PRE-HEAT outdoor grill to medium heat. (Alternatively, preheat oven to 400°F (200°C) if baking).
-
2. WHISK all the ingredients for the Kansas-Style BBQ sauce (ketchup, molasses, apple cider vinegar, garlic powder, liquid smoke, dark brown sugar, cayenne pepper, salt, pepper) in a small bowl until well combined. Set aside.
-
3. PREPARE your skillet: Place the cut potatoes, brussels sprouts, and carrots into a 9-inch cast iron skillet. Arrange the boneless, skinless chicken thighs on top of the vegetables. Using a pastry brush, generously coat the tops of the chicken thighs with the prepared Kansas-Style BBQ sauce.
-
4. COVER the cast iron skillet tightly with a sheet of Reynolds Wrap® Non-Stick Foil, ensuring a good seal to trap moisture.
-
5. COOK:
If grilling: Place the covered cast iron skillet onto the preheated grill. Roast for 40 to 45 minutes, or until the chicken is tender and its juices run clear (a meat thermometer should read 165°F (74°C)). During the last 15 minutes of cooking, carefully remove the foil and continue to roast uncovered to allow the chicken to brown and the sauce to caramelize.
If baking: Place the covered cast iron skillet into the preheated oven. Bake for 40 to 45 minutes, or until chicken is tender and juices run clear (165°F (74°C)). For the last 15 minutes, remove the foil and bake uncovered to achieve a beautiful golden finish.
-
6. REST & SERVE: Once the chicken is done, carefully remove the skillet from the grill or oven. Let it cool for 20 minutes before serving. This resting period allows the juices to redistribute, ensuring maximum tenderness and flavor. Enjoy your delicious one-skillet meal!
