Ingredients

  • 2 ½ cups (150 g) dried rigatoni pasta

  • 1 medium onion, thinly sliced
  • 10 ounce (284 g) cremini mushrooms, cleaned and sliced
  • 3 cloves garlic, minced
  • 2 tablespoons (28 g) unsalted butter
  • 1 cup (237 ml) chicken stock (preferably homemade for best flavor)
  • ¼ cup (59 ml) marsala wine (use dry for a savory dish, sweet for a slightly sweeter sauce)
  • Splash or two of whole milk (or heavy cream for a richer sauce)
  • ½ cup (50 g) freshly grated Parmesan cheese, plus more for garnish
  • Salt and freshly ground black pepper, to taste
