Surviving the Storm, Savoring the Sunshine: A Beach Retreat & Culinary Delight
This past weekend delivered an unforgettable experience, mixing the raw power of nature with serene relaxation and exquisite culinary discovery. I found myself riding out my very first hurricane at the beach – a Category 2 storm, no less! While facing a hurricane is certainly not something one seeks out, with no alternative but to stay put, we embraced the challenge as best we could. The experience was truly unnerving; the entire beach house groaned and shuddered, and the large glass windows visibly wobbled and shook under the relentless assault of wind and rain. It was a sensation I’d never encountered, akin to an earthquake combined with an immense downpour. I am profoundly grateful that my family and I emerged from it safe and sound, and that the storm, while intense, wasn’t one of the most devastating. Many in the area faced power outages, and I sincerely hope that all services have been fully restored for everyone affected.

Post-Storm Serenity: Embracing the Beach and 4th of July Festivities
Miraculously, in the wake of the hurricane, we were blessed with absolutely gorgeous beach weather. The skies cleared, the winds calmed, and the sun shone brightly, inviting us to fully immerse ourselves in the beauty of the coast for the remaining two days of our trip. This was likely our only beach getaway for the year, and I’m incredibly thankful that Mother Nature decided to cooperate so splendidly despite the dramatic start. We made the most of every moment, feeling the warm sand between our toes and listening to the gentle lapping of the waves – a stark contrast to the storm’s fury.
Beyond the unexpected adventure of the hurricane, the trip was also a wonderful opportunity for connection. I had the pleasure of meeting up with one of my Pure Barre instructors, who also happened to have a beach house in the same area. We spent a delightful two hours at the pool on Saturday, soaking up the sun’s warm rays and enjoying an uninterrupted chat. It’s truly a small world when you encounter familiar faces in such unexpected and beautiful settings, making the experience even more special and memorable.

Our long weekend culminated in a fantastic celebration of America’s birthday. We were treated to a spectacular display of fireworks over the sound where our beach house was located. Even from a distance, the vibrant light explosions painting the night sky were a breathtaking sight. It was the perfect culmination of our trip: beach, family, delicious food, and refreshing drinks, all combining for a truly great Independence Day. I hope your 4th of July was just as joyful and celebratory!

From Fine Dining to Home Cooking: Recreating The Inn at Little Washington’s Chilled Creamy Asparagus Soup
Speaking of unforgettable experiences, who could forget Jason’s and my one-year wedding anniversary trip to the renowned The Inn at Little Washington? And more specifically, who could forget me absolutely RAVING about the exquisite chilled creamy asparagus soup shooter we savored there as one of our appetizers? That soup left such a profound impression that I honestly could not stop thinking about it. Its delicate flavors and incredibly smooth texture haunted my culinary thoughts, driving me on an immediate quest to find the recipe and attempt to recreate that magic in my own kitchen.
After a diligent search, I finally discovered the recipe online, tucked away in owner Patrick O’Connell’s cookbook – a true culinary treasure! Armed with this newfound knowledge, I rushed to the grocery store, gathering all the necessary ingredients with eager anticipation. The first batch I made was generous, producing a huge quantity that we happily enjoyed multiple times a day for about three days straight. We simply couldn’t get enough of it. It proved to be an absolute revelation, especially perfect for the warm weather we were experiencing. The chilled soup was incredibly refreshing, providing a delightful coolness that soothed and invigorated. The flavors are exceptionally outstanding; none are overly dominant, not even the asparagus, which is often a strong flavor profile. Instead, each ingredient plays a subtle, harmonious role, coming together to form one of the creamiest, most luxurious soups I have ever had the privilege of tasting. A secret tip: the longer this soup sits and chills in the refrigerator, the more its flavors meld and deepen, and its texture becomes even richer and thicker, enhancing the overall experience.

Chilled Creamy Asparagus Soup
Equipment
-
Blender
-
Immersion blender
-
Food processor
-
Dutch oven
Ingredients
- ¼ cup (57 g) unsalted butter
- 2 leeks, chopped and rinsed
- 1 medium size onion, coarsely chopped
- 2 stalks celery, coarsely chopped
- 3 medium-sized Idaho potatoes, peeled and coarsely chopped
- 2 bay leaves, crumbled
- 8 cups (1893 ml) vegetable stock
- 2 pounds (907 g) fresh asparagus
- 3 tablespoons olive oil
- 1 ½ cups (355 ml) heavy cream
- Salt and pepper, to taste
Instructions
-
In a 4-quart heavy-bottomed saucepan, melt the butter over medium high heat until shimmering.1/4 cup (57 g) unsalted butter
-
Add the chopped leeks, coarsely chopped onion, and coarsely chopped celery to the saucepan. Cook them gently, stirring occasionally, until the vegetables are tender and translucent but not browned, which should take about 8-10 minutes. Then, stir in the peeled and coarsely chopped Idaho potatoes and crumbled bay leaves, cooking for an additional 5 minutes to allow the flavors to meld. Pour the vegetable stock into the pot, bring it to a rolling boil, then reduce the heat to a simmer. Continue simmering until the potatoes are completely soft and easily pierced with a fork, approximately 15-20 minutes.2 leeks, 1 medium size onion, 2 stalks celery, 3 medium-sized Idaho potatoes, 2 bay leaves, 8 cups (1893 ml) vegetable stock
-
While the main soup base is simmering, prepare your fresh asparagus. Remove and discard any tough white ends from the asparagus stalks. Wash the remaining green spears thoroughly and cut them into uniform 1-inch pieces.2 pounds (907 g) fresh asparagus
-
In a large skillet, heat the olive oil over high heat until it just begins to shimmer. Sauté the asparagus in three separate batches to avoid overcrowding the pan, cooking each batch only until it turns a vibrant bright green color but is still firm and retains a slight crunch. Immediately remove the cooked asparagus from the skillet and reserve it on a plate. Once all the asparagus has been cooked, add all of it to the simmering potato and vegetable soup base at once.3 tablespoons olive oil
-
Continue to cook the soup for another 4-5 minutes after adding the asparagus. The goal is for the asparagus to become just barely tender while still maintaining its bright green color and fresh flavor. Be careful not to overcook, as this can make the asparagus mushy and dull its color.
-
Carefully remove the soup from the heat. Using either a standard blender or an immersion blender, puree the soup in small batches until it is completely smooth and creamy. If using a standard blender, work in batches and never fill the blender more than halfway, keeping the lid slightly ajar or using a vented lid to allow steam to escape (cover with a kitchen towel to prevent splattering). After each batch of soup is pureed, transfer it to a large bowl or another clean 4-quart saucepan. Once all the soup has been pureed to a velvety consistency, stir in the heavy cream. Return the soup to low heat for another 5 minutes, allowing the cream to gently warm through and meld with the other flavors. Finally, season the soup generously with salt and pepper to taste, adjusting until the flavors are perfectly balanced.1 1/2 cups (355 ml) heavy cream, Salt and pepper
-
Allow the soup to cool down to room temperature naturally on the counter. Once cooled, cover it tightly and place it in the refrigerator for at least 12 hours. This chilling period is crucial for the flavors to fully develop and for the soup to achieve its optimal chilled texture and consistency.
-
Serve this delectable Chilled Creamy Asparagus Soup cold, perhaps garnished with a sprig of fresh dill, a swirl of extra cream, or a sprinkle of toasted almonds for an added touch of elegance and crunch.

Why You’ll Love This Chilled Asparagus Soup: A Refreshing Summer Delight
There are countless reasons why this Chilled Creamy Asparagus Soup will become a staple in your warm-weather repertoire. Firstly, its creamy texture is unparalleled. Achieving this silky smooth consistency through careful pureeing ensures every spoonful is a luxurious experience, without any grittiness or fibrous bits from the asparagus. This smooth mouthfeel is what truly sets it apart from many other vegetable soups.
Beyond texture, the flavor profile is a masterclass in subtlety and balance. Asparagus, while the star, doesn’t overpower the palate. Instead, it’s complemented by the gentle sweetness of leeks and onions, the earthiness of celery, and the comforting heartiness of Idaho potatoes. The bay leaves infuse a delicate aromatic background, tying all the vegetable notes together. The heavy cream then rounds everything out, adding a rich depth and a velvety finish that makes the soup incredibly satisfying yet surprisingly light. It’s a sophisticated flavor that feels both gourmet and comforting, perfect for a special occasion or a simple weeknight meal.
Moreover, the versatility of this soup is a huge advantage. While explicitly designed to be served chilled, offering an incredibly refreshing respite on a hot day, it can also be enjoyed warm. This flexibility means you don’t have to pack the recipe away once the seasons change. Asparagus is also known for its health benefits, being a good source of vitamins K, A, C, and folate, as well as antioxidants. Enjoying it in this delicious form is a fantastic way to incorporate more wholesome vegetables into your diet.
Perfect for Any Occasion: Serving Suggestions & Variations for Your Asparagus Soup
This chilled creamy asparagus soup is not just a meal; it’s an experience. To elevate your serving, consider a few simple garnishes. A delicate swirl of extra heavy cream or a drizzle of high-quality olive oil can add visual appeal and an extra touch of richness. For a pop of freshness, finely chopped chives, fresh dill, or a sprig of parsley make excellent choices. If you appreciate a textural contrast, a sprinkle of toasted slivered almonds, crispy croutons, or even a few asparagus tips blanched and chilled would be delightful. For a truly elegant presentation, serve it in small shot glasses as an appetizer, much like we experienced at The Inn at Little Washington.
Looking to adapt the recipe? For a lighter version, you could experiment with using a combination of milk and cream, or even a non-dairy alternative like unsweetened cashew cream or oat milk, though this will alter the rich texture. If you’re not a fan of bay leaves, a pinch of dried thyme or a bay leaf alternative could offer a different aromatic note. You can also intensify the asparagus flavor by briefly roasting some of the asparagus before adding it to the soup, bringing out its sweetness and earthiness. This soup is also an excellent candidate for making ahead, as its flavors only deepen with time in the refrigerator, making it a perfect option for entertaining or meal prepping throughout the week.
