As March draws to a close, it’s hard to believe we’re already a quarter of the way through the year. Time truly does fly! Despite the calendar firmly pointing to spring, the weather has been playing tricks on us. Just yesterday, we were surprised by a flurry of snow – the kind of cold, white powder usually reserved for the depths of winter. It’s certainly a peculiar start to what should be a season of warmth and bloom, yet it offers a unique backdrop to both our culinary endeavors and personal reflections.

From Unexpected Snow to Embracing Spring’s Bounty
While the weather might be undecided, one thing is certain: spring brings with it an abundance of fresh, vibrant produce. And nothing quite signifies the arrival of this season like the tender spears of asparagus. Today, we’re not just talking about the unpredictable climate or my latest literary escapades; we’re diving into a recipe that perfectly captures the essence of spring: a hearty and incredibly satisfying Roasted Asparagus and Chicken Penne Bake. This dish is designed to be a comforting staple, bringing warmth and flavor to your table, regardless of what the weather decides to do outside.
A Reader’s Journey: From E-Reader Decisions to Gripping Narratives
Beyond the kitchen, my personal world has also seen some exciting developments. After much deliberation, I finally took the plunge and bought a Kindle. The decision wasn’t made lightly; I weighed the pros and cons of various devices, including the Nook and the iPad Mini. Ultimately, my primary goal was a dedicated reading device, free from the distractions that a multi-purpose tablet like the iPad Mini would inevitably bring. This narrowed the choice down to Nook versus Kindle. Given my established loyalty as an Amazon Prime member and observing the shifting landscape of Barnes & Noble, the Kindle emerged as the clear winner. The overwhelming recommendations from 85% of you for the Kindle Paperwhite further solidified my choice. The cherry on top? I snagged it for $20 off at Best Buy – a true win-win situation!
Diving Deep into Dystopian Worlds and Emotional Endings
My new Kindle didn’t waste any time getting put to good use. I swiftly devoured the final installment of the Divergent series, Allegiant. To say I was emotionally invested would be an understatement; I literally found myself shedding tears in my office. I confess I don’t quite understand why Allegiant received such mixed reviews, particularly regarding its ending. For me, it was a beautiful and poignant conclusion to a phenomenal series. Perhaps it’s the profound attachment one develops to characters over the course of a trilogy, or even just a compelling standalone novel.
Do you ever find yourself becoming so deeply connected to fictional characters that finishing a series leaves you with a lingering sense of emptiness? For me, the tears weren’t solely for the specific events or the ending itself, but more for the sheer fact that an incredible journey with these beloved characters had concluded. It’s a bittersweet feeling, akin to saying goodbye to dear friends. The challenge then becomes finding a new series to fill that void, a task I currently find daunting because I cherished the Divergent world and its inhabitants so profoundly. Yes, I know, I might sound a little dramatic, but I assure you, this ‘book hangover’ is real!
I’ve even declared a temporary moratorium on dystopian trilogies. I need time to properly mourn the end of the Divergent saga. In an attempt to shift gears and lighten my mood, I considered picking up a happy-go-lucky chick-lit novel. However, all the ones I’m eager to read are currently being saved for an upcoming plane ride. So, instead, I’ve decided to veer in the opposite direction and delve into the dark and suspenseful world of Gillian Flynn’s Gone Girl. I actually bought this book last year but held off on reading it due to countless warnings about its controversial and, for many, unsatisfying ending. I have a strong aversion to bad endings and stories that lack proper closure, so those comments gave me considerable pause.
Interestingly, I heard that Gillian Flynn herself was re-writing the ending for the movie adaptation, which was slated for release later that year, precisely because of the strong reactions the original ending provoked. This curiosity, coupled with the desire for a completely different reading experience, finally pushed me to start it. So far, it’s proving to be incredibly engrossing – I can barely put it down! I fully anticipate finishing it this week. Have you read Gone Girl? I’d love to hear your thoughts on it, especially regarding that notorious ending.

The Recipe: Roasted Asparagus and Chicken Penne Bake
Now, let’s turn our attention back to the star of the show: this incredible Roasted Asparagus and Chicken Penne Bake. Despite the confusing weather patterns, the arrival of asparagus season is a consistent joy. What better way to celebrate this delicate, earthy vegetable than by roasting it to perfection and incorporating it into a creamy, comforting penne casserole? This dish truly epitomizes spring comfort food – it’s light enough to feel seasonal but hearty enough to satisfy.
This versatile bake can easily be adapted into a purely vegetarian delight by simply omitting the chicken. However, for a more substantial meal, especially to satisfy my husband, Jason, I opted to include tender cubes of boneless, skinless chicken breast. The beauty of this recipe lies in its adaptability. My personal touch is a generous, almost excessive, topping of panko breadcrumbs and grated Parmesan cheese. While it made scooping out the pasta a bit of a delightfully messy affair – with golden, crispy crumbs scattering everywhere – the incredible texture and flavor it added to every single bite were absolutely worth it! Just a friendly tip: feel free to be as generous as you dare with the topping, but perhaps not quite as enthusiastic as I was, unless you enjoy a little culinary chaos!
This recipe is not only incredibly easy to assemble, making it perfect for a busy weeknight, but it also yields a generous portion. This means you’ll have plenty of delicious leftovers to look forward to throughout the week, making meal planning a breeze. It’s a wonderful dish for family dinners, entertaining, or simply enjoying a satisfying meal on a chilly spring evening. The combination of perfectly roasted asparagus, tender chicken, al dente penne, and a luscious, savory sauce, all crowned with a crispy, cheesy topping, creates a symphony of flavors and textures that you’ll want to revisit again and again.

Equipment
-
Large rimmed baking sheet
-
Baking dish (2 1/2 quart casserole dish)
Ingredients
- 2 large bunches of asparagus, tough ends chopped off
- ⅛ cup (29 ml) olive oil
- 2 cups (225 g) penne pasta
- 2 boneless, skinless chicken breasts, cut into 2-inch cubes
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 ½ cups (355 ml) whole milk, or whatever % milk you like to use
- 2 tablespoon all-purpose flour
- Salt and pepper, to taste
For the topping
- 1 ½ cups (90 g) panko breadcrumbs
- 3 tablespoons (42 g) butter, melted
- ½ cup (50 g) Parmesan cheese
Instructions
-
Preheat oven to 400 °F (204 °C).
-
On a large baking sheet (you’ll likely need two) lined with parchment paper or silicone baking mats, spread the asparagus into a single layer. Drizzle olive oil evenly over the asparagus and season generously with salt and pepper, approximately 1/2 tsp of each per sheet.2 large bunches of asparagus, 1/8 cup (29 ml) olive oil
-
Bake the asparagus for 15-20 minutes, or until tender-crisp. Remove from the oven and set aside to cool slightly. Once cool enough to handle, cut the asparagus into equal thirds.
-
Reduce the oven temperature to 350 °F (177 °C).
-
While the asparagus is roasting, bring a large pot of salted water to a rolling boil. Add the penne pasta and cook it according to package directions, but aim to slightly undercook it. The pasta will finish cooking in the oven, absorbing more flavor from the sauce.2 cups (225 g) penne pasta
-
In a separate large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the cubed chicken breasts and brown them on all sides, but do not cook them completely through. Remove the chicken from the pot and set aside. In the same pot, add the diced onion and minced garlic, cooking until fragrant, about 1 minute. Reduce the heat to medium, then gradually whisk in the flour into the milk, ensuring no lumps. Pour the milk-flour mixture into the pot and stir continuously until the sauce thickens, which should take about 3 minutes. Return the browned chicken to the pot, along with the partially cooked pasta and the chopped roasted asparagus. Toss all ingredients together thoroughly to ensure everything is coated in the creamy sauce. Season with additional salt and pepper to taste. Remove the pot from the heat and transfer the mixture into a large 2 1/2 quart casserole dish.2 boneless, skinless chicken breasts, 1 medium onion, 2 cloves garlic, 1 1/2 cups (355 ml) whole milk, 2 tablespoon all-purpose flour, Salt and pepper
-
In a small bowl, combine the panko breadcrumbs and Parmesan cheese with the melted butter. Mix well until the panko is evenly coated. Sprinkle this mixture generously over the top of the casserole, creating a delicious, crispy crust.1 1/2 cups (90 g) panko breadcrumbs, 3 tablespoons (42 g) butter, melted, 1/2 cup (50 g) Parmesan cheese
-
Bake the casserole, uncovered, for 45 minutes, or until the pasta and chicken are thoroughly cooked through, the mixture is bubbling around the edges, and the panko topping is golden brown and crispy.
-
Serve immediately, allowing the rich aromas to fill your kitchen.
-
Any delicious leftovers can be stored in an airtight container in the refrigerator for up to 1 week, ready for another quick and satisfying meal.
