A delightfully hearty salad with seasonal ingredients! Delicata squash gives such a nice meaty component to this salad without being over the top.

Ingredients

  • 2 cups (60 g) loosely packed baby spinach
  • 5 ounce (142 g) can of tuna packed in water, drained
  • 1 small apple, cubed
  • ¼ red onion, cut into half moons
  • Handful crushed Parmesan crisps
  • Handful crushed crispy onions
  • Roasted delicata squash (about ½ small squash, roasted and cut into rings or half moons)
  • Salt and pepper, to taste
  • Your favorite dressing (honey dijon recommended)

Instructions

  1. Combine all ingredients (baby spinach, drained tuna, cubed apple, red onion, Parmesan crisps, crispy onions, roasted delicata squash, salt, and pepper) into a large bowl. If using a salad chopper, run it through all ingredients until chopped to your desired consistency. If you prefer to keep your delicata squash whole (as rings or half-moons) for visual appeal, you can set them aside and add them on top after chopping the other ingredients, as shown in the photos. Either method works perfectly.
