Ingredients

  • 2 ½ cups (592 g) dried whole wheat penne pasta
  • 9 ounces (255 g) sundried tomato and basil flavored chicken sausage, sliced into ½-inch thick rounds
  • 2 garlic cloves, minced
  • ½ large onion, diced
  • 3 ounces (85 g) julienned sun dried tomatoes
  • 6 ounces (170 g) broccoli rabe
  • Juice of 1 lemon
  • ½ teaspoon crushed red pepper flakes (adjust to taste for spice preference)
  • Salt and freshly ground black pepper, to taste
  • ¼ cup (59 ml) extra virgin olive oil, plus extra for tossing pasta
  • Parmesan cheese shavings, for topping (optional, but highly recommended)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the whole wheat penne pasta and cook according to package directions until al dente. While the pasta cooks, prepare your other ingredients. Once cooked, scoop the pasta out with a slotted spoon and transfer it to a large bowl. Drizzle with a bit of olive oil and toss gently to prevent sticking. Keep the pasta water simmering in the pot; you’ll use it for blanching the broccoli rabe.
