Ingredients:
For the Vegetables:
- 1 large potato, cut into medium-sized chunks
- 1 ½ cups cauliflower florets
- ½ cup sliced carrots
- ½ cup green peas
- ½ cup green beans, chopped into 1-to-2-inch pieces

- 10 to 12 cashews
- 2 tablespoons avocado or peanut oil
- 1 teaspoon cumin seeds
- 1 bay leaf
