Embracing Simplicity: My Favorite Quick Basic Chopped Salad for a Delightful Meal
Hello, wonderful readers! I hope you all had a truly lovely Mother’s Day weekend, filled with joy, laughter, and delicious food. I’m excited to pop in and share a fantastic salad recipe that I whipped up for an early Mother’s Day celebration with my parents last Saturday. This isn’t just any salad; it’s a testament to how incredible a simple, well-crafted salad can be.

On a personal note, following up on my recent post about blogging, I wanted to reiterate that I’m absolutely not quitting this space. Instead, I’m embracing a more flexible, joyful approach to sharing content. The pressure of a strict posting schedule can sometimes overshadow the passion, so I’m shifting gears to blog for fun again. This means I’ll be popping in with recipes and stories whenever inspiration strikes, without the added stress. I have several new recipe videos I filmed in March that I can’t wait to share, and many more dishes I love with fascinating stories behind them. I hope you’ll join me on this renewed journey as we rediscover the simple pleasures of cooking and sharing!

Redefining Salads: Beyond Diet Food to a Fulfilling Meal
As I mentioned, I prepared this specific chopped salad for our Mother’s Day lunch, and honestly, I didn’t realize just how much I would adore it until I had already devoured two generous platefuls. It’s truly basic, incredibly quick to assemble, and marvelously adaptable – you can add as little or as much to it as your heart desires. Isn’t that the very essence of a great salad?
For far too long, salads have suffered from an undeservedly bad reputation. They’ve often been relegated to the realm of “diet food” or a “healthy choice” made out of obligation at restaurants. This perception undermines the true potential of a salad. Whatever happened to simply craving a fresh, vibrant medley of greens and vegetables? We need to reclaim the joy of eating a salad because it’s genuinely delicious and satisfying, not just because we’re “being healthy” or “on a diet.”
I also vehemently disagree with the argument that “a salad is not a meal.” This is simply untrue! A well-constructed salad can absolutely be a complete and incredibly filling meal. The key lies in building it correctly. When you thoughtfully combine a good balance of protein, complex carbohydrates, healthy fats, and a generous array of fresh vegetables, a salad transforms into a powerhouse of nutrition and flavor. It’s not merely a side dish or a meager attempt at wellness; it’s a robust, wholesome, and genuinely satisfying culinary experience. It can be a healthier choice, yes, but by no means is it something you should eat only when counting calories. It’s a delicious option for *any* day of the week, for *any* meal.

Crafting the Perfect Blend: Ingredients that Sing
What truly elevated this particular chopped salad for me was the harmonious blend of flavors and textures. As someone who isn’t a fan of raw tomatoes, I opted for a fantastic alternative: roasted red bell peppers. Roasting the peppers brings out their inherent sweetness and adds a beautiful, smoky depth that raw tomatoes simply can’t achieve. This simple swap makes a world of difference for those who prefer their vegetables a little softer and sweeter.
Roasting red bell peppers is incredibly easy. You can certainly buy them pre-roasted in a jar for ultimate convenience, which is a great time-saver. However, if you have a grill fired up (as we did for our Mother’s Day pork chops), tossing the peppers on the grill for a few minutes until they’re tender and slightly charred is fantastic. For my regular quick lunches, I simply slice large red bell peppers into thick wedges, drizzle them with a touch of olive oil, sprinkle with salt and pepper, and roast them in the oven until they’re perfectly tender and slightly caramelized. This method adds minimal effort for maximum flavor payoff.
The combination of fresh, crisp cucumbers with the sweet notes of roasted red peppers is absolutely divine. Add to that the sharp, zesty kick of red onions (I confess, I adore raw onions in my salads – they provide such a wonderful bite!), and the briny goodness of kalamata olives, and you have a truly remarkable flavor profile. If you’re a fan of a more Mediterranean flair, crumbled feta cheese would be an outstanding addition, bringing a creamy, salty element that perfectly complements the other ingredients. I didn’t have any on hand that day, but it’s definitely a strong recommendation for those looking to enhance the salad further.
To ensure this salad was a complete and satisfying meal, I added some lean protein. I quickly seared some chicken tenderloins, seasoned simply with salt, pepper, and my absolute favorite Trader Joe’s onion salt (it’s a game-changer!). Once cooked, I chopped them into bite-sized pieces and tossed them into the salad. The tender, savory chicken rounds out the meal beautifully, providing the necessary protein to keep you feeling full and energized. This protein component is crucial for transforming a simple mix of greens into a substantial and wholesome dish.

The Perfect Dressing & Chopping Techniques
When it comes to dressing this incredible salad, my absolute favorite is Bolthouse Farms’ Honey Mustard dressing. If you’ve never tried Bolthouse Farms yogurt dressings, you are truly missing out. They stand out not only for their fantastic flavor but also for their excellent macros. They offer a creamy, flavorful experience without all the added fat typically found in conventional dressings, allowing you to use a more generous amount (if you, like me, are a “heavy dresser”) without guilt. Their range of dressings is a staple in my fridge for healthy eating.
The “chopped” aspect of this salad is what makes it so appealing and easy to eat. Every ingredient is cut into small, uniform pieces, ensuring that you get a bit of everything in each bite. This enhances the flavor harmony and makes the salad incredibly enjoyable. While you can certainly chop everything finely on a cutting board with a good chef’s knife, I highly recommend investing in a chopping bowl and a dedicated salad chopper. These tools revolutionize the process, making prep incredibly quick and simple. You can toss in barely chopped cucumbers, whole olives, and larger pieces of onion, and the chopper will effortlessly reduce them to your desired consistency. It’s a small investment that pays off in time saved and perfectly chopped salads every time. If you don’t want to buy a specialized set, a sharp pizza cutter can also work wonders for chopping ingredients directly in a large bowl.

Alternatively, you can chop everything finely on a cutting board then place into a large bowl to dress. Or you can prepare this as a regular salad with toppings instead of chopping it.
-
Drizzle your favorite dressing on top and mix thoroughly to combine all the delicious flavors.
Notes
What I love about this chopping bowl and chopper is that you barely have to pre-chop anything. I throw in barely chopped cucumbers, whole olives, and larger pieces of onion, and the chopper efficiently chops it all up to the perfect size. For a budget-friendly alternative, a pizza cutter can also be used in a large, sturdy bowl to achieve a similar chopped effect.

Customization and Meal Prep Excellence
One of the greatest strengths of this Quick Basic Chopped Salad is its incredible adaptability. Think of it as a blank canvas awaiting your culinary creativity. Beyond the core ingredients, there are countless ways to customize it to your taste and what you have on hand. Consider adding toasted nuts like almonds or walnuts for extra crunch and healthy fats, or a sprinkle of seeds such as pumpkin or sunflower seeds. Different cheeses like goat cheese or shaved Parmesan could also elevate the flavor profile. For an extra boost of fiber and complex carbs, cooked quinoa or farro can be tossed in. Don’t shy away from incorporating other seasonal vegetables; cherry tomatoes (if you like them raw!), diced avocado for creaminess, or even some grilled corn could be fantastic additions.
This salad is also a fantastic candidate for meal prepping. You can prepare most of the components in advance to ensure quick and easy assembly during busy weekdays. Roast a larger batch of red bell peppers at the beginning of the week. Cook and cube extra chicken tenderloins or another protein source like chickpeas or hard-boiled eggs. Wash and chop your greens, cucumbers, and red onions. Store each component separately in airtight containers in the refrigerator. When it’s time to eat, simply combine everything in your chopping bowl, give it a quick chop, drizzle with dressing, and you’re good to go. This approach ensures you always have a healthy, delicious, and satisfying meal ready in minutes, eliminating the temptation for less healthy options.
I genuinely believe this Quick Basic Chopped Salad will become a staple in your recipe rotation, just as it has in mine. It’s a vibrant, wholesome, and incredibly versatile dish that proves salads can be exciting, filling, and far from boring.
