Effortless Excellence: The Magic of Instant Pot Pork

The beauty of this recipe lies in its streamlined process. You simply place a generous cut of boneless pork shoulder into your Instant Pot, smother it with rich salsa verde, and let the pressure cooker work its magic. This hands-off approach ensures the pork becomes incredibly tender and falls apart easily, soaking up all the zesty, savory flavors of the salsa. Once the pork is perfectly cooked and shredded, the remaining steps involve a quick assembly in an oven-safe skillet, finishing with a glorious bake in the oven.

The result is an explosion of incredible flavor that tastes like you’ve spent hours in the kitchen, when in reality, your Instant Pot did most of the heavy lifting. This dish truly elevates comfort food to a new level, offering a hearty, satisfying experience that will leave everyone craving another spoonful.

Why You’ll Love These Pork Poblano Skillet Enchiladas

When you’re longing for something deeply satisfying—perhaps a twist on your favorite tacos or a crowd-pleasing dish for a potluck—this skillet enchilada delivers. Every bite is packed with robust flavors, from the tender pork marinated in salsa verde to the sweet and earthy notes of roasted poblano peppers. We all have those days when only a truly GOOD, hearty, stick-to-your-ribs meal will do, and this recipe is precisely that.

The pork’s depth of flavor comes primarily from the salsa verde, but the roasted poblanos truly steal the show. If you haven’t incorporated roasted poblanos into your cooking repertoire yet, you are seriously missing out! These mild chili peppers offer a smoky, slightly sweet, and earthy taste that complements the rich pork and tangy salsa verde perfectly, without adding excessive heat.

This dish should undoubtedly be at the top of your “must-make” list. Once you experience the magic of roasted poblanos, you might find yourself exploring other poblano-infused recipes, like a creamy roasted poblano pepper and chicken soup or a charred poblano and peppered bacon guacamole, which are equally delightful!

Julie Chiou

A super flavorful Instant Pot pork dish that transforms into a deconstructed enchilada masterpiece right on your stovetop, then finished under the broiler!

Prep Time:
20 minutes
Cook Time:
1 hour 30 minutes
Total Time:
1 hour 50 minutes
Servings:
6

Equipment

  • Instant Pot (6-quart or larger)
  • Large, oven-safe skillet

Ingredients

For the pork:

  • 2 ½ pounds (1134 g) boneless pork shoulder
  • 16 ounces (454 g) roasted salsa verde (jarred is fine, or homemade)

For the rest of the dish:

  • 3 roasted poblanos, deseeded and diced (see notes for roasting tips)
  • 15.5 ounce (440 g) can of black beans, drained and rinsed
  • 1 cup (165 g) frozen corn, thawed
  • Salt and pepper, to taste
  • 6 flour tortillas, cut lengthwise into thick 2″ strips then halved
  • ¾ cup (99 g) shredded Colby Jack cheese
  • Optional Garnish: Chopped green onions or cilantro

Instructions

  1. In the insert of your 6-quart Instant Pot or pressure cooker, place the whole boneless pork shoulder. Pour the entire jar of roasted salsa verde over the pork. This combination will create an incredibly flavorful and tender shredded pork base.
  2. Close the lid of the pressure cooker securely and ensure that the vent is set to the “sealing” position. This is crucial for proper pressure cooking.
  3. Press the “Meat/Stew” function button on your Instant Pot. Adjust the time setting to 65 minutes. The Instant Pot will take some time to come to pressure before the cooking cycle begins.
  4. Once the pork has finished cooking, allow the pressure to naturally release. This usually takes about 15-20 minutes. Once the pin drops, indicating all pressure has been released, carefully open the lid. Remove the cooked pork and place it on a cutting board. Shred the pork using two forks; it should be incredibly tender. Do NOT discard the flavorful liquid remaining in the Instant Pot, as you will need it later.
  5. While the Instant Pot is naturally releasing, preheat your oven broiler to high.
  6. In a large, oven-safe skillet, heat over medium-high heat. Add your diced roasted poblanos, drained and rinsed black beans, thawed frozen corn, and the shredded pork. Season the mixture with salt and pepper to taste, then continue to cook for 5-7 minutes, stirring occasionally, until all ingredients are thoroughly warmed through.
  7. Add the cut flour tortillas to the skillet. Ladle in about ½ to ⅔ cup of the reserved salsa verde liquid from the Instant Pot. Toss everything gently to soften the tortillas and ensure all the ingredients are beautifully coated in the rich sauce. This creates the “deconstructed” enchilada effect.
  8. Evenly sprinkle the shredded Colby Jack cheese over the top of the skillet mixture. Place the skillet in the preheated oven under the broiler for 2-4 minutes, or until the cheese is perfectly melted, bubbly, and slightly golden. Watch carefully to prevent burning.
  9. Carefully remove the skillet from the oven. Garnish with chopped green onions or fresh cilantro, if desired, for a burst of freshness. Divide the skillet enchiladas into bowls and serve immediately. Enjoy your incredibly flavorful and easy meal!

Tips for Perfect Instant Pot Pork Poblano Skillet Enchiladas

Achieving restaurant-quality flavor at home is easier than you think with a few simple tips:

  • Don’t Skimp on Roasting Poblanos: Roasting the poblanos beforehand is key to their distinctive smoky flavor. You can do this by placing them directly over a gas flame, under a broiler, or on a hot grill until the skin is charred and blistered. Then, transfer them to a bowl and cover with plastic wrap for about 10-15 minutes to steam, which makes peeling easier. Once peeled, deseed and dice. If you’re short on time, some stores offer pre-roasted poblanos in jars.
  • The Secret to Tender Pork: The Instant Pot is a game-changer for pork shoulder. Allowing for natural pressure release is important as it helps the meat stay moist and incredibly tender, making it easy to shred with just two forks. Resist the urge to quick release unless specified by the recipe.
  • Salsa Verde Quality Matters: While jarred salsa verde is perfectly convenient and delicious for this recipe, the quality can vary. Choose a brand you love, or if you have extra time, homemade salsa verde will elevate the flavors even further.
  • Maintain the Liquid: That cooking liquid from the Instant Pot is pure gold! It’s infused with all the rich pork and salsa verde flavors. It’s essential for moistening the tortillas and binding all the ingredients in the skillet.
  • Broiler Watch: When broiling the cheese, keep a close eye on your skillet. Broilers work quickly, and cheese can go from perfectly melted to burnt in seconds. The goal is bubbly, golden-brown cheese.

Delicious Variations & Serving Suggestions

This Instant Pot Pork Poblano Skillet Enchilada recipe is wonderfully versatile. Feel free to customize it to your taste or what you have on hand:

  • Protein Swap: While pork is fantastic, shredded chicken (cooked similarly in the Instant Pot with salsa verde) or even ground beef can be used. For a vegetarian option, consider using extra beans, sweet potatoes, or hearty mushrooms.
  • Spice It Up: If you prefer more heat, add a diced jalapeño or serrano pepper to the skillet along with the poblanos. A pinch of cayenne pepper or a dash of hot sauce at the end can also add a kick.
  • Add More Veggies: Sautéed onions, bell peppers, zucchini, or even a handful of fresh spinach can be added to the skillet for extra nutrition and texture.
  • Cheese Please: Colby Jack is a great choice, but feel free to experiment with other melting cheeses like Monterey Jack, cheddar, or a Mexican blend. A sprinkle of cotija cheese after baking adds a salty finish.
  • Serving Ideas: These skillet enchiladas are a meal in themselves, but they pair wonderfully with a side of cilantro-lime rice, a simple green salad, or a dollop of sour cream or Greek yogurt. Don’t forget fresh avocado slices or a scoop of guacamole for a creamy contrast. A squeeze of fresh lime juice over the top brightens all the flavors.

Storing and Reheating Leftovers

Leftovers of this Instant Pot Pork Poblano Skillet Enchilada are just as delicious, if not more so, the next day.
Store any remaining enchiladas in an airtight container in the refrigerator for up to 3-4 days.
To reheat, you can warm individual portions in the microwave until heated through. For larger portions, transfer them to an oven-safe dish, cover with foil, and bake at 350°F (175°C) for about 15-20 minutes, or until thoroughly heated. If you like crispy cheese, uncover for the last few minutes of baking. You can also freeze portions for longer storage (up to 2-3 months) and reheat from frozen, allowing extra time.

This Instant Pot Pork Poblano Skillet Enchilada recipe truly offers the best of both worlds: the convenience of pressure cooking combined with the irresistible flavors of classic Mexican-inspired cuisine. It’s a comforting, hearty, and flavorful dish that’s easy enough for a busy weeknight yet impressive enough for any gathering. Give it a try, and prepare to add it to your regular rotation!
