  • 2 ½ cups (592 ml) vegetable stock
  • 1 ¼ cups (240 g) dried lentils
  • 1 ½ cups (210 g) butternut squash, cubed into 1-inch pieces
  • 4 large carrots, cut into large 2-inch pieces
  • 4 stalks of celery, cut into large 2-inch pieces
  • 1 medium onion, quartered
  • 15 ounce (425 g) diced fire-roasted tomatoes
  • Handfuls of chopped lacinato kale (or dinosaur kale)
  • Salt and pepper, to taste

Instructions

  1. Add vegetable stock and dried lentils into the insert of the Instant Pot and stir.
    2 1/2 cups (592 ml) vegetable stock,
    1 1/4 cups (240 g) dried lentils
  2. Add the butternut squash, carrots, celery, and onion in. Stir gently to combine.
    1 1/2 cups (210 g) butternut squash,
    4 large carrots,
    4 stalks of celery,
    1 medium onion
  3. Carefully dump the diced fire-roasted tomatoes (including their liquid) on TOP of all the other ingredients. DO NOT STIR. Allow them to sit as a layer on top. This prevents the “Burn” notice and ensures proper pressure build-up.

  4. Secure the Instant Pot lid, ensuring the vent is turned to the “Sealing” position. Press the “Soup” button on your Instant Pot and adjust the time to 8 minutes. Alternatively, you can press “Manual” (or “Pressure Cook”) and set it to high pressure for 8 minutes.
  5. Once the cooking cycle is complete, carefully perform a manual quick release by flipping the vent to the “Venting” position. Stand back and allow all the steam to escape before opening the lid.
