Classic cinnamon sugar donuts with a pumpkin spice twist!

Ingredients

  • ½ cup (118 ml) vegetable oil
  • 3 large eggs
  • 1 ½ cup (300 g) granulated sugar
  • 1 ½ cup (368 g) pumpkin puree
  • 2 teaspoon pumpkin pie spice
  • 1 ½ teaspoon kosher salt
  • 1 ½ teaspoon baking powder
  • 1 ¾ cup (219 g) + 2 tbsp. all purpose flour

For the cinnamon-sugar topping:

  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350 °F (177 °C) and grease two regular sized donut pans. Set aside.
  2. In the bowl of a stand mixer, combine vegetable oil, eggs, granulated sugar, and pumpkin puree. Mix until well combined.
    1/2 cup (118 ml) vegetable oil,

    1 1/2 cup (300 g) granulated sugar,
    1 1/2 cup (368 g) pumpkin puree
  3. In a separate medium bowl, combine pumpkin pie spice, kosher salt, baking powder, and all-purpose flour. Whisk these dry ingredients together thoroughly.
    2 teaspoon pumpkin pie spice,
    1 1/2 teaspoon kosher salt,
    1 1/2 teaspoon baking powder,
    1 3/4 cup (219 g) + 2 tbsp. all purpose flour
  4. Gently pour the dry ingredient mixture into the stand mixer bowl with the wet ingredients. Mix until just combined, being careful not to overmix.
  5. Fill the prepared donut wells with the batter. You can use a piping bag or a spoon for this.
  6. Bake for 15-18 minutes, or until a toothpick inserted comes out clean. Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. While the donuts are baking and cooling slightly, prepare the cinnamon-sugar topping. In a small bowl, wide enough to dip the donuts, combine the granulated sugar and cinnamon.

    1 tablespoon cinnamon
  8. While the donuts are still warm (but cool enough to handle), dip each one into the cinnamon sugar mixture, pressing lightly to ensure a good coating.
  9. These Pumpkin Spice Cinnamon Sugar Donuts are best enjoyed on the day they are made. If stored in an airtight container, the sugar coating may dissolve over time.
