Essential Ingredients for Sun-Dried Tomato Chicken Pasta

Crafting this incredible pasta dish requires a few key ingredients, each playing a vital role in building its depth of flavor and creamy texture. Here’s what you’ll need:

  • Chicken Breast: We recommend boneless, skinless chicken breasts, cubed into approximately 1-inch pieces for quick and even cooking. For an even richer flavor and more tender texture, boneless, skinless chicken thighs can be used as a fantastic alternative. Ensure they are cut into similar-sized pieces to ensure consistent cooking.
  • Salt and Black Pepper: These fundamental seasonings are crucial for bringing out the natural flavors of the chicken and balancing the rich sauce. Don’t be shy; properly seasoned chicken makes a world of difference!
  • Olive Oil: A good quality olive oil is used for searing the chicken and sautéing the aromatics. If you’re using sun-dried tomatoes packed in oil, you can use a tablespoon or two of that flavorful oil from the jar instead of fresh olive oil to add an extra layer of depth to your dish.
  • Sun-Dried Tomatoes: These are the star of the show! Sun-dried tomatoes in oil are highly recommended as they provide a more intense, robust flavor and a softer texture. Plus, as mentioned, the oil itself is packed with flavor. If using plain dried sun-dried tomatoes, you might want to rehydrate them slightly in warm water before mincing. Ensure they are minced for even distribution throughout the sauce.
  • Garlic: No Italian-inspired pasta dish is complete without a generous amount of garlic! We call for at least 3-4 cloves, minced, to infuse the sauce with its pungent, aromatic goodness. Fresh garlic is always preferred over pre-minced for superior flavor.
  • Chicken Stock: This liquid forms the flavorful base of our sauce. While store-bought chicken stock (or broth) works perfectly fine for convenience, if you have homemade chicken stock, it will elevate the dish to an even higher level of deliciousness.
  • Whole Milk: For a wonderfully creamy yet lighter sauce, whole milk is ideal. It provides richness without being overly heavy. If you desire an extra indulgent, restaurant-level creaminess, feel free to substitute with heavy whipping cream or a mix of both. Have a little extra on hand in case your pasta needs more liquid during simmering.
  • Fettuccine or Linguine Pasta: Long, flat pasta shapes like fettuccine or linguine are excellent choices for this dish because their broad surface area allows the luscious, creamy sauce to cling beautifully to every strand. This ensures each bite is coated in flavor. If you prefer shorter pasta shapes, penne or rigatoni would also work well, though you may need to adjust the cooking time slightly as indicated on the package.
  • Parmesan Cheese: Freshly grated Parmesan cheese is non-negotiable for the best flavor and melt-in-your-mouth texture. It adds a salty, umami depth to the sauce and perfectly complements the other ingredients. Pre-grated cheese often contains anti-caking agents that can affect the sauce’s texture.
  • Baby Spinach Leaves: Added at the very end, baby spinach provides a lovely pop of color, a touch of freshness, and a boost of iron and other nutrients. Its mild flavor wilts beautifully into the warm pasta without overpowering the dish.

How to Master Sun-Dried Tomato Chicken Pasta in One Pot

Creating this gourmet-tasting, one-pot pasta is simpler than you might think. Follow these detailed steps to achieve a dish that will have everyone asking for seconds. For precise measurements, please refer to the detailed recipe instructions provided further down.

  1. Prepare and Sear the Chicken: Begin by seasoning your cubed boneless, skinless chicken breast generously with salt and freshly ground black pepper. Place a large, high-sided skillet (preferably a 12-inch or larger for ample space) over medium-high heat. Once the skillet is hot, add the olive oil (or the flavorful oil from your sun-dried tomato jar). Carefully add the seasoned chicken pieces to the hot oil in a single layer, ensuring not to overcrowd the pan. Cook the chicken for about 3-5 minutes per side, until it’s beautifully browned on the exterior and almost cooked through to the center. Remove the cooked chicken from the skillet and transfer it to a clean bowl, setting it aside for later. The slight undercooking is intentional as it will finish cooking in the sauce.

  1. Sauté the Aromatics: Using the same skillet (no need to clean it – those browned bits are flavor!), reduce the heat to medium. Add the minced garlic and sun-dried tomatoes. Sauté for about 30-60 seconds, stirring constantly, until the garlic becomes fragrant and the sun-dried tomatoes release their rich aroma. Be careful not to burn the garlic, as it can turn bitter very quickly.
  2. Introduce the Liquids: Gently pour in the chicken stock and whole milk (or heavy cream, if using) into the skillet. Stir thoroughly to combine all the ingredients, scraping up any delicious browned bits from the bottom of the pan – this is called “deglazing” and adds immense flavor to your sauce. Bring the liquid mixture to a gentle boil over medium heat.

  1. Cook the Pasta Directly in the Sauce: Carefully add the dried pasta (fettuccine or linguine, broken in half if necessary to fit your skillet) to the boiling liquid. Stir well to ensure all the pasta strands are completely submerged in the sauce. Reduce the heat to a gentle simmer, cover the skillet if your lid fits snugly, and allow the pasta to cook for 10-15 minutes, or until it is cooked through to al dente and most of the liquid has been absorbed, transforming into a rich, creamy sauce consistency. Stir occasionally to prevent the pasta from sticking. If the liquid cooks down too quickly before the pasta is done, simply add a splash more milk or chicken stock until the pasta is perfectly cooked.

  1. Assemble and Finish: Once the pasta is perfectly cooked and the sauce has thickened to your desired consistency, remove the skillet from the heat. Add the fresh baby spinach leaves, allowing the residual heat to gently wilt them into the pasta. Return the cooked chicken pieces to the skillet and sprinkle in the freshly grated Parmesan cheese. Stir all the ingredients together thoroughly until everything is well-combined, the spinach is wilted, and the cheese has melted into the creamy sauce. Taste and adjust seasonings if necessary.

Expert Tips for the Perfect Sun-Dried Tomato Chicken Pasta

Achieving restaurant-quality results with this one-pot creamy pasta is simple, especially with a few insider tips:

  • Don’t Overcrowd the Pan: When searing the chicken, work in batches if necessary to ensure the chicken browns properly. Overcrowding will steam the chicken instead of searing it, preventing that delicious crust from forming.
  • Utilize Sun-Dried Tomato Oil: If using oil-packed sun-dried tomatoes, don’t discard the oil! It’s infused with incredible flavor. Use a tablespoon or two of it to sauté your chicken or aromatics for an extra depth of taste.
  • Adjust Sauce Consistency: The beauty of one-pot pasta is how the starch from the pasta thickens the sauce. If your sauce appears too thick, simply add a splash more milk or chicken stock until it reaches your preferred consistency. If it’s too thin, let it simmer uncovered for a few more minutes, stirring, until it reduces and thickens.
  • Freshly Grated Parmesan is Key: While convenient, pre-grated Parmesan often contains anti-caking agents that can make your sauce gritty. For the smoothest, most flavorful sauce, opt for a block of fresh Parmesan and grate it yourself just before adding.
  • Taste and Adjust Seasoning: Always taste your sauce before and after adding the pasta. Adjust salt and pepper as needed. Sun-dried tomatoes and chicken stock can vary in their saltiness, so it’s important to fine-tune the seasoning to your palate.
  • Don’t Overcook the Pasta: Aim for al dente pasta – firm to the bite. Since the pasta cooks directly in the sauce, it will continue to absorb liquid and cook slightly even after it’s removed from the heat.

Recipe Variations to Explore

This creamy sun-dried tomato chicken pasta is wonderfully versatile, allowing for numerous delicious adaptations:

  • Add More Fresh Herbs or a Blend: Elevate the aroma and flavor by garnishing with finely chopped fresh basil or parsley. For a deeper Italian flavor profile, stir in a teaspoon of Italian seasoning to the sauce mixture along with the liquids. A pinch of red pepper flakes can also add a delightful subtle warmth.
  • Omit the Chicken for a Meatless Marvel: If you’re looking for a vegetarian option, simply omit the chicken entirely. The sauce is so rich and flavorful on its own that it stands beautifully as a meatless meal. You can also explore adding other vegetables like sautéed mushrooms, bell peppers, or zucchini for extra body. For a dedicated meatless version, check out a similar recipe like our Creamy Sun-Dried Tomato Pasta.
  • Boost the Protein: Craving more protein? Cooked shrimp can be added at the very end, just until heated through, for a delectable seafood twist. Cooked Italian sausage (mild or spicy) crumbled and browned beforehand also makes an excellent addition, infusing the sauce with even more savory depth.
  • Cheesy Swaps: While Parmesan is classic, consider experimenting with other cheeses. A touch of grated Pecorino Romano can add a sharper, saltier kick, or a spoonful of mascarpone cheese stirred in at the end can make the sauce even more velvety and rich.
  • Add More Veggies: Beyond spinach, consider folding in roasted red peppers (another fantastic complement to sun-dried tomatoes), sautéed mushrooms, or even some blanched asparagus tips for added texture and nutrition.

Storage and Reheating Instructions for Leftovers

This creamy sun-dried tomato chicken pasta is best enjoyed fresh, but leftovers can be stored and reheated with a few considerations to maintain its deliciousness:

  • Storage: Allow any leftover pasta to cool completely to room temperature before transferring it to an airtight container. Refrigerate promptly for up to 3 days. Freezing creamy pasta is generally not recommended as the dairy can separate and become grainy upon thawing, affecting the texture of the sauce.
  • Reheating on the Stovetop: For best results, gently reheat the pasta in a skillet over low to medium heat on the stovetop. As creamy sauces tend to thicken significantly in the refrigerator, you will likely need to add a splash of liquid – either water, more chicken stock, or a little milk/cream – to loosen up the sauce and restore its creamy consistency. Stir frequently until warmed through.
  • Reheating in the Microwave: While less ideal for maintaining optimal texture, you can reheat individual portions in the microwave. Place the pasta in a microwave-safe dish, add a tablespoon or two of liquid (water, stock, or milk), cover loosely, and heat in 1-minute intervals, stirring in between, until heated through. Be careful not to overheat, which can cause the sauce to separate.

Serving Suggestions to Complete Your Meal

This rich and flavorful sun-dried tomato chicken pasta is substantial enough to stand on its own, but pairing it with a few simple sides can create a truly memorable meal:

  • Crusty Bread or Garlic Knots: I absolutely love serving this pasta with my Easy Garlic Knots or even some Garlic Herb Parker House Rolls. The delightful garlic flavors in both perfectly complement the pasta, and they are fantastic for soaking up every last drop of that extra creamy, delicious sauce!
  • Fresh Green Salad: To balance the richness of the pasta, a light and refreshing salad is an excellent choice. A simple green salad with a vinaigrette dressing, or a Quick Basic Chopped Salad, provides a crisp counterpoint and adds freshness to the meal.
  • Steamed or Roasted Vegetables: A side of steamed broccoli, green beans, or roasted asparagus can add more nutrients and color to your plate without overwhelming the main dish.
  • A Glass of Wine: For adults, a crisp white wine like a Pinot Grigio or Sauvignon Blanc can beautifully cut through the creaminess of the sauce. Alternatively, a light-bodied red wine, such as a light-oaked Chardonnay or a Sangiovese, would also pair wonderfully.

  8. When the pasta is fully cooked, you should be left with a creamy sauce that sticks to the pasta. If you find the sauce too thick, simply add a splash of milk. If the sauce is too thin, just cook it down a little further.
