Ingredients

  • 9 ounces (255 g) mafaldine pasta, or similar
  • 8 slices bacon, cooked extra crispy
  • 1 cup (88 g) thinly sliced brussels sprouts
  • 2 cloves garlic, minced
  • 1 cup (100 g) parmesan
  • 2 eggs + 1 egg yolk
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of water to a boil and season generously with salt. Add pasta to the boiling water and cook according to the package instructions until al dente. Reserve about ½ cup of pasta water before draining the rest.
