Discover the Irresistible Charm of Black Sesame Ice Cream
For those who have yet to experience it, black sesame possesses an incredible flavor that is genuinely in a league of its own. It’s often described as a deep, roasted nuttiness, but even that doesn’t fully capture its complex essence. There’s a subtle earthiness, a hint of bitterness that perfectly balances the sweetness, and an unmistakable aroma that makes it utterly captivating. This unique flavor profile is far more prevalent and celebrated in Asian countries than in many Western parts of the world, particularly in desserts and baked goods.
During visits to places like Taiwan, black sesame appears virtually everywhere, from savory dishes to an array of tantalizing sweets. Even major retailers like Costco in these regions stock a wide variety of black sesame products, including convenient black sesame paste. While this recipe guides you through making fresh black sesame paste from scratch – a process that guarantees maximum flavor – imagine the possibilities if store-bought paste were readily available! The sheer number of delectable desserts and pastries one could create would be endless. This homemade approach ensures an unparalleled depth of flavor that’s often missing in mass-produced versions.
Beyond its mesmerizing taste, the striking black color of this ice cream immediately distinguishes it from conventional flavors, making it a showstopper on any dessert table. But it’s the distinctive nutty, almost savory yet sweet taste that truly leaves a lasting impression, inviting curiosity and delight with every bite. This isn’t just an ice cream; it’s an experience.
The Secret to Intense Black Sesame Flavor: Toasting
One of the most crucial steps in unlocking the full potential of black sesame is proper toasting. This simple process dramatically enhances the seeds’ natural fragrance, imparts a delightful crunchy texture (before blending), and deepens their inherent nuttiness. By taking the time to toast the seeds correctly, we infuse the ice cream with an extra boost of authentic sesame flavor that is both robust and satisfying. There’s nothing more disappointing than ordering black sesame ice cream only to find its sesame flavor barely detectable. This recipe guarantees that won’t be a complaint, delivering a truly rich and pronounced black sesame experience.
Why No-Churn Ice Cream is a Game Changer
The “no-churn” method is a fantastic innovation for homemade ice cream, making it accessible to everyone, regardless of whether they own an ice cream machine. This technique relies on whipped heavy cream and sweetened condensed milk to create a wonderfully creamy and smooth texture, eliminating the need for constant churning. It’s surprisingly simple, requires minimal equipment, and consistently yields results comparable to traditional churned ice cream. For busy individuals or those new to ice cream making, no-churn recipes are a revelation, proving that gourmet frozen treats are well within reach without any specialized gadgets.
Crafting Your Own Black Sesame Ice Cream: A Step-by-Step Guide
Making this unique black sesame ice cream is an incredibly rewarding process, divided into a few straightforward steps. Precision and patience, especially during the toasting and chilling phases, will ensure the best possible flavor and texture.

- Perfectly Toast the Sesame Seeds: Begin by spreading your black sesame seeds evenly in a dry skillet over low heat. Toast them for approximately 10-12 minutes, stirring frequently with a spatula to prevent burning. The goal is to heat them thoroughly until they become intensely fragrant, emitting an aroma akin to hot oil. This process is crucial for deepening their flavor. Once fragrant and hot to the touch, immediately remove the pan from the heat and transfer the seeds to a plate or bowl to cool completely. This prevents further cooking and preserves their rich flavor.
- Prepare the Silky Ice Cream Base: While your toasted black sesame seeds are cooling, it’s time to prepare the luxurious base for your ice cream. In a large mixing bowl, whip the chilled heavy cream using an electric hand mixer or a stand mixer fitted with a whisk attachment. Whip on medium-high speed for about 3-4 minutes until the cream begins to form very soft peaks – at this stage, it won’t quite hold its shape. Then, add a pinch of salt and the vanilla extract. Continue whipping for another 3 minutes or until medium peaks form, where the cream holds its shape somewhat but still appears slightly soft. Visible trails from the mixer indicate the right consistency. Cover the whipped cream and chill it in the refrigerator until you are ready to combine all components. This ensures maximum aeration and a creamy final product.

- Craft the Rich Black Sesame Paste: Once the toasted black sesame seeds have cooled completely to room temperature, transfer them to a food processor or a high-speed blender. Begin to pulse the seeds. As you pulse, gradually add cold water, one tablespoon at a time, between pulses. The goal is to encourage the seeds to release their natural oils and transform into a thick, coarse, and grainy paste. You will likely need approximately 3 tablespoons of cold water in total. This process extracts the full, robust flavor and rich color of the sesame. Finally, add the chilled sweetened condensed milk to the sesame paste in the blender or food processor and blend until everything is thoroughly combined into a smooth, dark, and aromatic mixture. This paste is the heart of your ice cream’s flavor.

- Gently Combine for Creaminess: Retrieve the bowl of whipped cream from the refrigerator. Carefully add the prepared black sesame paste mixture to the whipped cream. Using a spatula, gently fold the black sesame mixture into the cream until it is evenly distributed and thoroughly combined. The key here is to fold, not stir vigorously, to maintain the airy volume of the whipped cream, which is essential for the light and creamy texture of your no-churn ice cream. Continue until no streaks of white cream remain, and you have a beautifully uniform, dark gray mixture.
- Chill to Perfection: Pour the entire ice cream mixture into a loaf pan (a standard 9″ x 5″ x 3″ pan works perfectly). Use your spatula to smooth the top surface. Cover the pan tightly with plastic wrap, ensuring it touches the surface of the ice cream to prevent ice crystals from forming. Place the pan in the freezer for at least 6 hours. For a softer, more scoopable consistency, 6 hours will suffice. If you prefer a firmer, harder ice cream reminiscent of store-bought varieties, chill it overnight or for up to 8-10 hours.

Storage Instructions and Serving Suggestions
Once frozen, your homemade black sesame ice cream should be transferred to an airtight, freezer-safe container. Stored properly, it will maintain its delicious flavor and creamy texture for up to 2 months. This allows you to enjoy this unique treat at your leisure or prepare it in advance for special occasions.
Black sesame ice cream is delightful on its own, allowing its complex flavors to shine. However, it also pairs wonderfully with a variety of accompaniments. Consider serving it with fresh berries, a sprinkle of toasted white sesame seeds for added texture, or alongside traditional Asian desserts like mochi, red bean paste, or a light fruit compote. A drizzle of honey or a sprinkle of finely chopped nuts can also enhance the experience.

This Asian-inspired ice cream recipe is slightly savory, slightly sweet, nutty, bold, and completely scrumptious.
Prep Time: 40 minutes
Cook Time: 12 minutes
Chill Time: 6 hours
Total Time: 6 hours 52 minutes
Servings: 8 cups
Equipment
-
Hand mixer
-
Stand mixer
-
Blender
-
Food processor
-
Loaf pan (9″ x 5″ x 3″)
Ingredients
-
1 cup (150 g) black sesame seeds
-
2 cups (473 ml) heavy cream, chilled
-
½ teaspoon salt
-
2 tablespoons vanilla extract
-
300 ml sweetened condensed milk, chilled
Instructions
-
In a medium frying pan over low heat, toast black sesame seeds until hot throughout and fragrant (approximately 10 – 12 minutes). Stir with spatula every so often so seeds do not burn. When they start to smell like hot oil and are hot to the touch, take the pan off the heat. Transfer seeds to a bowl / plate and let cool completely.
-
In a large mixing bowl and using hand or stand mixer set to medium-high speed, whip the heavy cream for 3-4 minutes. When the cream starts to form very soft peaks (not enough to hold its shape), add salt and the vanilla extract, and continue whipping for another 3 minutes or until medium peaks form. The trails in the cream should be visible but with slightly softened peaks. Cover and chill the whipped cream in the fridge until ready to use.
-
Place the cooled sesame seeds (should be more or less room temperature) into a blender or food processor and pulse, adding 1 tbsp of cold water between pulsing until they release their oil and form a thick paste (you will need roughly 3 tbsp of cold water). The texture of the paste will be coarse and grainy.
-
Add chilled condensed milk into blender and pulse again until fully mixed.
-
Take the bowl of whipped cream from refrigerator and gently fold in the black sesame mixture until thoroughly combined.
-
Pour ice cream mixture into loaf pan and smooth the top with the spatula. Cover with plastic wrap and chill in freezer for at least 6 hours. For softer ice cream consistency chill for 6 hours, for harder ice cream consistency, chill overnight.
Notes
This recipe calls for a 9” x 5” x 3” loaf pan; however, other sizes and forms of pans (e.g., a 9”x13”x2” cake pan) also work. A shallower pan will help the ice cream to cool faster. Any materials (ceramic, glass, or metal pans) will work.
