On our recent flight, the two young girls seated behind me, seemingly around five and six years old, continuously unbuckled and ran back and forth in their row, jarring our seats forward. When they did sit, my seat became their personal kickbag. Children are incredibly capable of understanding and responding to guidance when addressed directly and taught with patience. When parents are distracted, their “shh!” or other light admonishments often fall on deaf ears. It’s frustrating to witness such disregard for fellow passengers and the opportunity to teach children appropriate public behavior.

Chocolate Sugar Cookies

Ingredients

  • cup (67 g) granulated sugar
  • 1 ½ cups (188 g) plus 2 tbsp. all-purpose flour
  • ¾ cup (65 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 14 tablespoons (196 g) unsalted butter
  • 1 ¾ cups (385 g) packed dark brown sugar
  • 1 tablespoon vanilla extract
  • ½ teaspoon salt
  • 1 large egg plus 1 large yolk

Instructions

  1. Preheat oven to 350 °F (177 °C). Line two baking sheets with parchment paper or silicone baking sheets. Place granulated sugar in a shallow dish and set aside.

  2. In a medium bowl, combine flour, cocoa, baking soda, and baking powder. Whisk thoroughly to ensure all dry ingredients are well-mixed.

    3/4 cup (65 g) unsweetened cocoa powder,
    1/2 teaspoon baking soda,
    1/4 teaspoon baking powder
  3. Microwave 10 tablespoons of butter, covered, in a large bowl until fully melted, typically about 1 minute. Remove from the microwave and stir in the remaining 4 tablespoons of butter until it completely melts from the residual heat. Allow the butter to cool to approximately 90-95 degrees Fahrenheit (32-35 °C), which should take about 5 minutes.

  4. In the bowl of a stand mixer fitted with the paddle attachment, combine the cooled melted butter with brown sugar, vanilla extract, and salt. Mix on medium speed until the mixture is smooth and no lumps of sugar remain. Incorporate the large egg and the extra egg yolk, mixing until the batter is creamy and well-blended. Gradually add the whisked flour mixture, mixing on low speed until just combined. Be careful not to overmix.
    1 3/4 cups (385 g) packed dark brown sugar,
    1 tablespoon vanilla extract,
    1/2 teaspoon salt,
    1 large egg plus 1 large yolk
  5. Take about 2 tablespoons of cookie dough at a time and roll it into smooth balls. Roll these balls generously in the granulated sugar you set aside. Place the sugar-coated dough balls evenly spaced on your prepared baking sheets. Using the flat bottom of a drinking glass, gently flatten each cookie ball to about 2 inches in diameter. For an extra sparkle and crunch, sprinkle each flattened cookie with an additional 1 1/2 teaspoons of the remaining granulated sugar.
  6. Bake one sheet of cookies at a time to ensure even baking. Bake for approximately 15 minutes, or until the cookies appear slightly puffy and their edges begin to set. Remember to rotate the baking sheet halfway through the baking process for uniform cooking. Don’t worry if the centers look slightly underdone or cracked; they will set as they cool. Once baked, let the cookies cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely. Allowing them to cool fully will ensure their perfect texture.
  7. For optimal freshness and flavor, store your delicious chocolate sugar cookies in an airtight container at room temperature for up to 5 days.
