Ingredients

Main Ingredients:

  • 2 pounds (907 g) boneless skinless chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced (white or yellow preferred)
  • 15 ounce (425 g) can tomato puree
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano (preferably Mexican oregano)
  • 2 chilis in adobo sauce + 1 tablespoon of the adobo sauce the chilis are in (see notes for spice adjustment)
  • Tortillas (corn or flour)

Instructions

  1. Generously season the chicken thighs with salt and black pepper. Place them in the bottom of your slow cooker.
  2. Heat the olive oil in a small skillet over medium-high heat. Add the thinly sliced onions and sauté for about 5 minutes, until they become translucent and slightly softened.
  3. Transfer the sautéed onions to the slow cooker, placing them over the seasoned chicken.
  4. To a blender, add the tomato puree, minced garlic, cumin, oregano, and the chipotle chilis along with 1 tablespoon of their adobo sauce. Blend until the mixture is smooth and forms a rich sauce.
