- 15 ounce (425 g) can of rinsed and drained cannellini beans
- 1 cup (237 ml) coconut milk or dairy-free milk of choice
- 1 ½ cup (210 g) frozen butternut squash or freshly diced/cubed

- Rinse the wild rice thoroughly under cold water. Place it in a cup or jar and cover it with fresh water to let it soak while you prepare the other ingredients. Soaking helps reduce cooking time and improves texture.
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Once the oil is shimmering, add the chopped yellow onion and carrots. Sauté for 2-3 minutes until they begin to soften.
