  • 15.5 ounce (440 g) can of black beans, drained and rinsed
  • 1 cup (165 g) frozen corn, thawed
  • Salt and pepper, to taste
  • 6 flour tortillas, cut lengthwise into thick 2″ strips then halved
  • ¾ cup (99 g) shredded Colby Jack cheese

Instructions

  • Place the whole boneless pork shoulder in the insert of your 6-quart Instant Pot or pressure cooker. Pour the roasted salsa verde over the pork.
