Ingredients

  • 1 whole chicken, about 4 pounds, giblets removed
  • Salt and pepper, to taste
  • 1 bunch fresh poultry herbs (sage, rosemary, thyme)
  • ½ onion, quartered
  • 1 lemon, halved
  • 1 cup (237 ml) chicken stock
  • 4 tablespoons (56 g) unsalted butter, room temperature
  • 2 tablespoons honey
  • 5 sprigs fresh thyme

Instructions

  1. Pat dry the exterior of your whole chicken and season generously with salt and freshly ground pepper. Place it on a large plate or cutting board.
  2. Wash your hands thoroughly. Carefully stuff the cavity of the chicken with the fresh poultry herbs, quartered onion, and lemon halves.
  3. Place the prepared whole chicken into the insert of your 6-quart pressure cooker. Pour the chicken stock around the chicken, ensuring it doesn’t cover the bird entirely.
  4. Close the lid of your pressure cooker. Using the manual mode (or pressure cook setting) on your appliance, set the pressure to high and the cook time to 35 minutes.
  5. While the chicken is cooking, preheat your oven to 450 °F (232 °C). In a small bowl, combine the softened unsalted butter, honey, and fresh thyme sprigs. Mix until well combined.

  10. To make a simple gravy from the remaining liquid in the pressure cooker: turn your pressure cooker to the “sauté” function (or transfer the liquid to a small saucepan on the stove).
